I bought a bag of Andes Creme De Menthe baking chips and I am looking for some recipes I might try with them. Anyone have a good mint cookie recipe I might use them in?
Andes Mint Cookies
(Tastes like Girl Scout cookies)
3/4 c. butter (11/2 stick)
11/2 cup brown sugar
2 Tablespoons water
12 oz. (2 cups) chocolate chips ...(I do 1 cup bittersweet, 1 cup semi)
2 1/2 cups flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
In a large bowl melt together the butter, brown sugar,
water and chocolate chips. *I microwave it for a minute at a
time stirring after each until melted.
Beat in eggs, add in sifted remaining dry ingredients until blended.
Chill 1 hour or overnight.
Shape into 1 inch balls and place on greased cookie sheet.
Bake @ 325°F for 8-10 minutes.
Place mint on top, you may want to place back in the oven
for a second or two. Spread when melted.
Let cool completely.
Here is a recipe of mine that I make every year..... It was published this year in the TOH Christmas/Holiday Cookbook.... (They renamed it.... grrrrrr) It is super easy and looks great on the Holiday Trays that I give away!!!
Line cold cookie sheets with waxed paper.Melt the Andes mints in one bowl & the white chocolate chips in a separate bowl.Dip crackers into the melted chocolate and then place onto a cold cookie sheet.Drizzle white chocolate over top and sprinkle with the crushed candy canes.Put into the refrigerator or freezer to set.

Daughter made cookies and put them in instead of choc chips, they were good. I bought the peppermint (red and white) ones and made a batch of white fudge, once the fudge was in the pan ready to cool I sprinkled about 3/4 of the bag on top. You could also do them on top of chocolate fudge.

1 Betty Crocker Devil's Food Cake mix
3 Tablespoons of Oil
8 oz. tub of Cool Whip
pkg of Andes Creme de Menthe baking chips
Mix by hand top 5 ingredients in large bowl. Place lid on bowl and then in refrigerator for 1 hour or over night. Preheat oven to 350 degrees. Take small spoonfuls of mixture and roll into balls and then into sugar. Place balls on ungreased cookie sheet and flatten balls slightly. Bake for 10 to 11 minutes. Cookies will be soft. Place on cooling rake or plate. When cookies cool they will firm up.
Taste alot like the Mint Girl Scout Cookies.
Mix some of them into brownies before you bake them. They're delicious.
