Tuna Bake with Biscuits

    I sent out a request for this recipe a few days ago, but no one could locate it for me, and after hours of searching on the BB and google, I gave up and just winged this recipe from memory. I was able to finally get in touch with the gal who shared this recipe with me maybe 35 years ago, and she confirmed that I had it down correct-for the mostpart. I love the way it turned out. I'll post my version and the original.

    3 T. butter (she uses Crisco)

    1/2 c. chopped onion

    1/2 c. chopped bell pepper (we both leave this out)

    1//2 c. chopped celery

    3 T. flour

    1 can chicken noodle soup (I used 2)

    1 can of milk (I did not use)

    1 t. lemon juice

    1/2 t. salt

    1 pouch or can of tuna -as much as you like)

    1 can refrigerated biscuits

    Melt butter in skillet. Saute vegetables until tender. Add flour and stir to dissolve. Add soup, milk if using, lemon juice, and salt. Pour into a 7x11 baking dish. Top with biscuits and bake about 20 minutes-cover the biscuits after about 10 minutes so they don't get too brown, but will still cook on the bottom.
