Wanting a recipe for Coconut Macaroon Brownies

  • Wanting a recipe for Coconut Macaroon Brownies

    I tasted these but wasn't able to get the recipe.  I do know she made the brownie part from a mix,  The macroon part was on top.  Very good.  Thanks for any help.

    Coconut Macaroon Brownies

    Prep - 25 minutes
    Bake - 30 minutes + 15 minutes
    Oven 350-F / 375-F
    Makes 12 brownies


    Ingredients:

    Nonstick cooking spray
    1 package (19.9 ounces) dark chocolate brownie mix, Duncan Hines
    1/2 cup vegetable oil
    2 eggs
    1/4 cup chocolate milk, Nesquik
    1/3 cup miniature chocolate chips, Nestle
    3 cups sweetened shredded coconut, Baker's
    3/4 cream of coconut, Coco Casa
    4 egg whites
    3 tablespoons cake flour, Swan's Down
    Pinch salt


    Directions:


    1. Preheat oven to 350 degrees F. Spray a 9-inch square baking pan with cooking spray; set aside.

    2. In a large bowl, stir together brownie mix, oil, eggs, and chocolate milk until combined. Stir in chocolate chips; pour mixture into the prepared baking pan.

    3. Bake for 30 minutes. Remove from oven; increase temperature to 375 degrees F.

    4. In a medium saucepan, combine coconut, cream of coconut, egg whites, cake flour, and salt; cook and stir over medium heat about 5 minutes or until an instant-read thermometer inserted in mixture registers 120 degrees F. Spoon hot coconut mixture over warm brownies.

    5. Bake for 15 to 20 minutes more or until done in center and coconut edges are lightly toasted. Cool in pan on a wire rack.

    I don't have my recipe book within reach  but Nancy's recipe is  very similar to mine .  A family favorite.

      Macaroon Brownies

       Macaroon Brownies
      48 ServingsPrep: 25 min. Bake: 40 min. + cooling

      Ingredients

      • 1 cup butter, softened
      • 2 cups sugar
      • 4 eggs
      • 1 teaspoon vanilla extract
      • 2 cups all-purpose flour
      • 1/2 cup baking cocoa
      • 1/2 teaspoon cream of tartar
      • 1/2 cup chopped walnuts
      • MACAROON FILLING:
      • 1 package (14 ounces) flaked coconut
      • 1 can (14 ounces) sweetened condensed milk
      • 2 teaspoons vanilla extract
      • FROSTING:
      • 3/4 cup sugar
      • 1/4 cup milk
      • 2 tablespoons butter
      • 1 cup miniature marshmallows
      • 1 cup (6 ounces) semisweet chocolate chips
      • 1 teaspoon vanilla extract

      Directions

      • In a large bowl, cream butter and sugar until light and fluffy. Add
      • eggs and vanilla; mix well. Combine the flour, cocoa and cream of
      • tartar; gradually add to creamed mixture. Stir in nuts. Spread half
      • into a greased 13-in. x 9-in. baking pan.
      • Combine coconut, condensed milk and vanilla; carefully spread over chocolate layer.   Top with the remaining chocolate mixture.  Bake at 350 degrees for 40-45 minutes or until toothpick inserted in center comes out clean.  Cool on a wire rack.
      • For frosting, combine sugar, milk and butter in a saucepan; cook and stir until sugar is dissolved.  Add the remaining ingredients. Cook and stir until marshmallows and chips are melted.  Cool until mixture reaches spreading consistency, about 25 minutes.  Spread over the cooled brownies.  Cut into bars.

    COCONUT ALMOND BROWNIES

    INGREDIENTS:

     

    1 box (21 oz.) Betty Crocker Hershey Ultimate Supreme
    Brownie Mix

         (mix according to pkg.
    directions using 3 eggs instead of 2)

     

    COCONUT FILLING

    1 can (14 oz.) sweetened condensed milk

    1 pkg. (7 oz.) flaked coconut

    1 c. chopped salted roasted almonds

    1 t. vanilla extract

     

    FROSTING:

    2 c. powder sugar

    1/2 c. baking cocoa

    1/2 c. butter flavored Crisco

    4 T. milk

     

    INSTRUCTIONS:

    Heat oven to 350.

    Spray a 9x13” cake pan with a non-stick cooking spray.

    Add brownie mix (mixed according to pkg. directions
    using 3 eggs instead of 2)

     

    Mix together sweetened condensed milk, flaked coconut,
    chopped salted roasted almonds and  vanilla extract.

    Spoon over brownie mixture.

     

    Bake for about 35 minutes or until toothpick inserted
    near the center comes out clean.  Cool.

     

    Mix together in bowl, powder sugar, cocoa, butter
    flavored Crisco, vanilla and milk.  Beat til spreading consistency.

     

    Spread over filling.
