I think beet greens are delicious. Boiled with a little vinegar on them. I grow them for the leaves, rather than the beets, but I do pickle the beets usually. Be sure to try them next time you get some.

I really like Swiss Chard just steamed. Sometimes with a little bacon grease, but most of the time not. Beet greens are good too. I like most all greens.

Re my post, page 1, #12. Made the Swiss Chard Frittata from Pinterest for supper tonight. Absoultely yum! The prep work wasn't as bad as I thought. Cleaned & cut the chard, and sliced the onions earlier in the afternoon. Started the onions bit too soon, they caramelized faster than I thought they would. Nothing was overly strong tasting, rather the chard, onion and cheese blended together. Will be making this again.
On another topic, this has also made me a fan of frittata. Never made one before, not as eggy tasting as an oumlet (sp?) Told DH i'm now on the hunt for frittatas! Jan.

I've not made frittatas either. You've inspired me to make one, since I have everything fresh to make one. Don't have any fresh swiss chard, but I've got a pkg. in the freezer. Hmmm, stink bugs, I think I'll leave the swiss chard out and maybe use beet tops.
lol ...i don't know what stink bugs are, guess we don't have them in this part of the world...If any vegetable reminded me of bugs & such, I don't think i would want to eat them either.
omamcm, can swiss chard be frozen like spinach? I freeze my extra spinach and use it during the winter in casseroles calling for the frozen stuff. Have seen references where can exchange spinach for chard. Hmm, maybe i'll try a pkg. or 2....think it'll be good in my spinach mushroom lasagna recipe. Jan.
