Wow~the heat and humidity is high already! I came in from the garden with herbs, cukes and tomatoes. Since it will be just the two of us(activities have been cancelled do to drought conditions and the kids have taken their families to the lakes). Tomatoes are looking good for this simple salad from Barefoot Contessa.

Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Sprinkle with a little fresh chopped basil and parsley and serve hot or at room temperature.

Thanks for peeking in here, Margaret. I haven't been disappointed with any of her recipes. This was a perfect summer salad...the herbs were wonderful combination and with a light extra virgin oil was great.
I hope you have tomato bounty, too. If we don't get rain pretty soon, we won't have much of a garden so I was savoring these tomatoes just in case the worst happens
