Pepperoncini Salad Dressing

  • Pepperoncini Salad Dressing

    I got this recipe from "Everyday Food".  Pepperoncini are the little green peppers you normally get in an anitpasto salad.  They are found in the grocery market near the olives.

    This morning I used it to make a potato salad.  Used 6 medium potatoes, boiled till tender in skins.  Peeled, diced them medium, and tossed in the whole 1/2 cup of dressing.  Garnished with diced red onion and seasoned with salt and pepper, to taste.  Spicy, spicy, but GOOOOOOD!  A treat for hot pepper lovers!!  Going to serve it with cold sliced corned beef that I cooked in the crockpot and a red cabbage slaw with poppy seed dressing (which should cool off the hot pepper bite, a bit!!)
