This recipe is in the current TOH Cooking School magazine and it sounded so good. I don't see many recipes in which to use my Saladmaster electric frypan so it immediately caught my attention. That and the fact that it sounded yummy. I did do a couple of things differently. I did not use the entire 5 oz. of baby spinach. It was overflowing so I used probably 4 oz. I omitted the mushrooms and cottage cheese because they are not DH's favorite. The two cheeses were more than adequate and actually, with so many veggies in this recipe, I didn't need the mushrooms. The dish was delicious and I plan to make it again. I may add a little Italian sausage to it next time. I highly recommend this recipe.

Here, then are my pictures and the recipe.

Here it is right after I lifted the lid off the frypan.

Here it is with a slice taken out.

And, here it is ready to eat. (YUM).

    Here is the recipe:

    VEGGIE LASAGNA

    1onion, sliced, use Cone #2

    24 ounces pasta sauce (340g)

    8 ounces lasagna noodles

    2 cups cottage cheese

    5 ounces fresh baby spinach

12 zucchini, sliced, use Cone #4 or #5

12 squash, sliced, use Cone #4 or #5

8 ounces mushrooms, sliced, use Cone #3

2 carrots, shredded, use Cone #1 or #2

    oregano, to taste

    basil, to taste

8  ounces cheddar cheese, shredded, use Cone #2

8 ounces mozzarella, shredded, use Cone #2

    Directions

    1. In electric skillet, place onion and 14 of the pasta sauce.
    2. Layer dry noodles over onion and sauce. Add 1 cup (226g) of cottage cheese, spreading across the noodles, making sure to cover all of the exposed noodles.
    3. Add spinach, zucchini, squash, mushrooms and carrots. Spread across top of cottage cheese and sprinkle with oregano and basil.
    4. Add cheddar cheese, another 14 of the pasta sauce, and layer with dry noodles.
    5. Add the remaining pasta sauce on top of noodles and spread across the noodles, making sure to cover all of the exposed noodles.
    6. Cover with mozzarella cheese and spread evenly across top.
    7. Set electric skillet heat control touch pad to 325°F/163°C. When Vapo-Valve™ begins to click, reduce temperature to 200°F/93°C and set timer for 35 minutes.
    8. Let stand for 15 minutes before cutting. Serve.

OMGosh that smelled SO good at the Buffalo Show.  I had snuck backstage to say hi to Michael just before the show and the Saladmaster rep had dropped off one of these lasagnas for the crew - it smelled divine!

Now I would just use my mandolin and make it in the oven..

Sue, the house smelled so good while it was cooking. You could easily use your mandolin to slice the veggies. I didn't realize this was one of the recipes they made. It just sounded good to me.

Salsa this electric skillet has an oil core.  It heats up evenly because of that oil.
