I have added raisins and chopped walnuts into the batter of carrot cake. You can also decorate the top of the cake...after frosting, put some walnut halves on it. Like a border around the edges, looks a little fancy!! Use a few drops of orange food coloring to the frosting...a restaurant we go to does this, very nice!!

    Carrot Cake with mix

    1 package carrot cake mix
    1/2 cup water
    1/2 cup oil
    3 eggs
    1/2 cup chopped walnuts
1 8oz can crushed pineapple with juice

Mix together and pour into a 9x 13 greased pan. Bake 350° for 35 to 40 minutes. Frost with cream cheese frosting.
