What do you do with leftover spaghetti noodles?

  • What do you do with leftover spaghetti noodles?
    I made spaghetti with meat sauce for dinner tonight and have some left over spaghetti noodles. I need some ideas to use them up.

    Make Spaghetti salad. I use broccoli, black and green olives, tomatoes, mozzarella cheese, and Italian salad dressing. Basically any pasta salad ingredients. The texture of the spaghetti is really good.

    Or baked spaghetti?

    Thanks for those great ideas Sheri and Dena. I never thought of making a pasta salad with leftover spaghetti noodles. Pan frying them sounds good too - would make a great side dish.

    Saute fresh garlic in some butter add some freshly chopped parsley and toss with the noodles. I've added grated cheese too.

    Hi Brenda,

    I make a really good Spicy Peanut & Noodle Salad.

    1/4 cup corn oil
    3 TBS Sesame Oil
    1 TBS Dried Red Chili Pepper Flakes
    3 TBS Honey
    2 TBS Soy Sauce
    1 TSP Salt
    8 Oz. Dry Linguini or Spaghetti
    2 TBS Chopped Cilantro
    1/2 Cup Roasted, Chopped Peanuts
    1/2 Cup Green Onions
    1 TBS Toasted Sesame Seeds

    In a saucepan, stir red pepper and oils over medium heat for 2 minutes. Add honey, soy sauce and salt. Stir to combine and set aside. Cook Spaghetti until tender and drain. Combine cooked spaghetti and soy sauce mixture. Cover and refrigerate for at least 4 hours. When ready to serve, add cilantro, peanuts, green onions and sesame seeds. Toss and garnish with cilantro sprigs.

    This is very, very good.

    I freeze them...so when we just need 'some' noodles we have them to pull out of the freezer and into the microwave! It came in handy the other nite when we had chicken caccitori (sp?) had the noodles in the freezer and put the chicken over them!

    Schools and restaurants freeze them., left them thaw and then just run hot water over them...theyheat up quite fast. A trick I learned while cooking in a school. They also cook them ahead adn then as they need more for that day, just run hot water over them to heat them up again...no mushy noodles from sitting around waiting to be served.

    I whip up a quick Alfredo sauce, toss the pasta in the sauce and then serve as a side dish with any kind of meat.

    I make pasta salad or homemade mac and cheese! It makes them interesting to use a different noodle every now and then! :)

    This is really good, and can be frozen too.

    Spaghetti Pie


    6 ounces spaghetti
    2 Tablespoons butter
    1/3 cup Parmesan cheese
    2 eggs -- beaten
    1 cup cottage cheese
    1/4 pound ground beef
    1/2 cup chopped onion
    1/4 cup chopped green pepper
    8 ounce can tomatoes -- cut up
    6 ounce can tomato paste
    1 teaspoon sugar
    1 teaspoon oregano
    1/2 teaspoon garlic salt
    1/2 cup mozzarella cheese

    Cook spaghetti per pkg. directions; drain. Stir butter into hot spaghetti, add parmesan cheese and eggs. Form into crust in buttered deep 10" pie plate. Spread cottage cheese over crust.
    In heavy skillet, cook beef, onion and green pepper; drain fat. Stir in undrained tomato paste, sugar and spices. Heat through. Spread on top of cheese layer. Bake 350° for 20 minutes. Sprinkle with mozzarella cheese and bake 5 additional minutes.

    My DH just loves this!!

    This is from a TOH annual cookbook.

    Chicken Tetrazzini

    2 c broken uncooked spaghetti
    3/4 c chicken broth
    1 can (10 3/4oz) cream of mushroom soup, undiluted
    1/8 tsp celery salt
    1/8 tsp pepper (more if you like)
    1 1/2 c cubed cooked chicken
    1 small onion, finely chopped
    2 TBSP pimentos (optional)
    1 1/2 c shredded cheddar cheese, divided

    1. Cook spaghetti according to pkg.

    2. Combine broth, seasonings, & cooked spaghetti.

    3. Stir in chicken, onion, pimientos & 1/2 c cheese.

    4. Transfer to a greased 8" square baking dish. Top w/ remaining cheese.

    5. Bake, uncovered, @ 350 for 35 to 40 minutes or until heated through.
