    Mom's Chicken Noodle Dish

    Serving Size : 15 Preparation Time :0:00
    Categories : main dishes poultry


    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 large fat hen -- cut into pieces and cooked until tender
    Make a sauce of
    1 cup chicken fat -- or as needed
    1/2 cup butter
    1/2 cup flour
    2 cups broth
    2 cups milk
    Add to sauce cooked chicken and
    1 12 oz package noodles -- cooked and rinsed
    1 pound cheese -- grated
    1 can mushroom
    1 can pimiento -- optional

    Top with Bread crumbx

    Bake 1 hour slowly. 325

    Raspberry Trifle

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 pound cake -- (16 0z), cut into 18 slices or 2 pkgs of ladyfingers
    2 packages instant vanilla pudding and pie filling -- (3.4 oz)
    1 jar raspberry jam
    1 1/2 pints fresh raspberries
    Whipped cream
    fresh raspberries

    Arrange one thir of sliced cake in the bottom of a trifle dish. Prepare pudding according to package directions. Place one thirdd more cake pieces around inside of bowl using half of pudding to hold them in place. Gently stir together jam and raspberries; spoon half over pudding. Cover with remaining cake pieces. Layer remaining pudding and raspberry mixture. Chill. Garnish with whipped cream and fresh raspberries.

    Mom's Hamburger Hawaiian

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2/3 cup canned milk -- evaporated, not sweetened condensed
    2/3 cup cracker crumbs
    1/2 cup onion -- chopped
    1 teaspoon seasoned salt
    1 1/2 pounds ground beef
    sweet & sour sauce
    13 1/2 ounces can pineapple chunks -- keep the juice, and I use the unsweetened
    1 cup green pepper -- chopped
    1 cup pineapple juice and water to make one cup
    2 tablespoons cornstarch
    1/4 cup vinegar
    1/4 cup brown sugar
    2 tablespoons soy sauce

    Combine first 5 ingredients, form into patties or balls. Brown in skillet.

    Heat next ingredients (except the pineapple chunks) until thickened and clear. Add pineapple chunks and green peppers.

    Pour sauce over meat and simmer 15 minutes.

    Rice is a great accompaniment.

    Noni's Taco Soup

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 pound ground beef
    1 small onion
    2 4 oz cans green chilis
    1 teaspoon salt
    1 teaspoon pepper
    1 can (15 oz) pinto beans -- rinsed and drained
    1 package Taco Seasoning mix
    1 cup water
    1 package ranch salad dressing
    1 can hominy -- drained
    3 cans (15 oz) Mexican Stewed tomatoes -- (can blend so that picky people don't see the lumps!)
    1 can Red Kidney beans -- rinsed and drained
    Shredded American cheese
    tortilla chips
    Sour cream

    In large Dutch oven, brown hamburger and onion. Add all remaining ingredients. Bring to boil. Reduce heat and simmer 30 minutes. Top with the cheese, chips and sour cream.

    Oatmeal Supreme Cookies

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1/2 stick margarine -- or butter
    1/2 cup sugar
    3/4 cup flour
    1/2 teaspoon baking soda
    1 teaspoon vanilla
    1 1/2 cups oatmeal
    6 ounces chocolate chips
    1/4 cup canola oil
    1/2 cup light brown sugar
    1 egg
    1/2 teaspoon salt
    1/2 cup pecan -- chopped

    Cream margarine, oil and sugars, well. Add egg and vanilla. Sift together flour, salt and soda. Stir in oatmeal, chocolate chips and pecans. Drop by Tablespoon onto a greased cookie sheet about 4 inches apart. Flatten to about 3 inch size. Bake 9 to 10 minutes at 350 or until browned.

    The recipe calls for 1/2 C coconut but I don't like coconut too much so I omit this. If you like you may want to put in.

    Also, I usually double this recipe. Even with just the 2 of us 18 cookies don't last long! hehehe

    About your Hamberg Hawaiin does it take the whole bottle of liquid smoke? I rarely use it except in my BBQ sauce so I'm not that familiar with it. Thanks.

    Hi Cali. You will love the recipe. When we moved from Nebraska to Washington in the early 60s one of our friends sent mom this cookbook from our church we attended when we lived in NE. this was the first recipe that she tried. It became a family favorite instantly!

    Well, my computer is being sluggish and I see that I double posted a recipe because of it.. going off for awhile and will come back and continueing to this post. Really thinking of getting a new computer. ;) Hope you have a great day!

    Apricot Delight Salad

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 packages apricot jello -- 3 oz
    2/3 cup water
    1 can crushed pineapple -- 20 0z
    1 1/2 cups pecans -- chopped
    2/3 cup sugar
    1 jar apricot baby food
    1 can sweetened condensed milk
    1 package cream cheese -- 8 oz softened

    Combine jello, sugar and water, bring to boil and dissolve jello.

    Remove from heat, stir in fruit; set aside to cool.

    Combine milk and cream cheese, beat until smooth.

    Stir in jellow mixture, add nuts. pour into mold or bowl and refrigerate.

    Jello Cake

    1 box of WHITE cake mix
    1 box (small box) of Jell-o Instant vanilla pudding mix
    1 box (small box) of any flavor Jell-o gelatin mix

    For decoration:
    Fresh strawberries, sliced
    Fresh blueberries (optional)
    Home-made whipped cream or Cool Whip
    1. Mix white cake mix as directed on box.
    2. Before putting in cake pan, add the box of vanilla pudding mix - mix throroughly.
    3. Bake cake as directed.
    4. When cake is halfway done, start the "Quick Set" directions on the Jell-o gelatin box. Put the mixed Jell-o in the fridge until it's not watery, but not solid. Kind of the consistency of oil.
    5. Get cake out of the oven and using a toothpick, poke lots of little holes in the top of the the cake (while still in the pan).
    6. Gently pour the Jell-o over the cake, letting it seep down into the holes.
    7. Put the cake back in the fridge for 2-3 hours, letting the Jell-o set in the cake.
    8. Make up a batch of creamy homemade whipped cream to use for icing.
    9. Slice (thin) the strawberries...

    I like to make an American Flag design, using red jello and using the sliced strawberries for the red stripes, and the blueberries for the blue/white stars.

    This cake turns out REAL moist and real light and fluffy. (it doesn't have hunks of Jello in it, it sets into the cake and makes it yummy!)

    4BS Cream of Tomato Soup 32 oz canned diced tomatoes 9 oz chicken broth 1 oz. butter 2 T butter 1 T chopped onions a pinch of baking soda 2 C cream Mix tomatoes, chicken broth, butter, sugar, onions and soda. Simmer one hour. Heat cream in double boiler. Add cream to hot tomato mixture. Ready to serve and enjoy!

    BisQuickAsAWink Mix

    Use this mix in any recipe calling for Bisquick or other commercial baking mixes. From Gloria Pitzer, The Recipe Detective.

    8 cups flour
    1 1/4 cups nonfat dry milk powder
    1/4 cup baking powder
    1 tablespoon salt
    2 cups shortening


    Combine flour, milk, baking powder, and salt in a very large bowl. Cut in shortening until it resembles coarse cornmeal. Store in tightly closed covered container in a cool place.

    Yield: about 10 cups
