    Hey gang...thought I'd join the club with a few of my favs. These I'm posting are brand new, I will hunt the other ones down that I've already posted in the next couple of days and repost them here! Hope you enjoy these!

    Crockpot Cheesy Creamed Corn
    *This is awesome for a Holiday Meal or special Sunday dinner!

    3 (16 ounces) packages frozen corn
    1 (8 ounce) package cream cheese, cubed
    1 (3 ounce) package cream cheese, cubed
    4 tablespoons butter, melted
    3 tablespoons water
    3 tablespoons milk
    2 tablespoons sugar
    6 slices, American cheese, cut up

    Combine all ingredients in slow cooker. Mix well. cover and cook on LOW for 4 hours.
    Serves 10.

    REC- Golden Potatoes
    Very rich and creamy!

    8-10 medium potatoes, peeled and cubed
    1 can cream of chicken soup
    1/2 cup butter
    1 cup sour cream
    2 bunches green onions, chopped
    1 lb shredded cheddar cheese

    cook the peeled and cubed potatoes in large pot with salted boiling water just until tender; about 15 minutes.
    Drain.
    In a seperate saucepan combine butter, soup and sour cream, heat until just melted.
    Layer in a spray coated 13x9 baking dish; potatoes, soup mixture cheese and onions (in that order.)
    Bake uncovered in a 350 oven for 30-40 minutes.
    Let cool 5 minutes before serving.
    Serves 10-12.

    REC-Snicker Bar Chimichangas
    This is the perfect desert for a Mexican themed meal. It's so ridiculously easy!

    7 (2 ounces) snickers bars
    4 burrito-size flour tortillas
    2 tablespoons butter, melted
    vanilla ice cream
    chocolate syrup
    whipped cream
    marachino cherries

    Cut 6 of the Snicker bars crosswise into 4 equal pieces.
    Arrange 6 Snicker pieces in the center of each tortilla.
    Fold up burrito style, secure ends with toothpicks.
    Transfer to a cookie sheet.
    Brush each side of chimchangas with the melted butter.
    Cover each with plastic wrap.
    Refrigerate for 1 hour.
    Preheat oven to 400.
    Uncover chimichangas and bake for 15-20 minutes or until golden brown. May only need 15 minutes, depending on your oven.
    Meanwhile, chop remaining candy bar into pieces.
    Serve each chimchanga topped with topping ingredients and the chopped candy.
    Serves 4

    Wow - Snickers Chimichangas!
    The easiest way to make my DH happy? Snickers Bars! You have found a way to his heart! This would be sooooo easy to do in the RV for a treat! Thanks for posting it!

    Mexi Cheeseburger Quiche
    *this is great for low carb followers!

    1 lb ground beef
    1 small onion, chopped
    1 (4 ounce) can diced green chilles
    2 eggs, beaten
    1/2 cup mayonnaise
    1/4 cup water
    1/4 cup heavy cream
    1/2 teaspoon cumin
    1/8 teaspoon cayenne pepper
    1 cup Mexican blend cheese, shredded

    Cook ground beef in skillet until done; drain.
    Add onions and chiles and cook for 5 minutes.
    Meanwhile, mix the rest of the ingredients in a bowl.
    Put beef mixture into a pie dish.
    Pour cheese mixture over it.
    Bake in a 350 oven for 35-40 minutes until cheese is puffed and slightly brown.

    Artichoke Bread
    This stuff is so addicting!

    1/4 cup butter
    2-3 cloves garlic, minced
    2 teaspoons sesame seeds
    1 (14 ounce) can artichoke hearts, drained and chopped
    1 cup shredded monterey jack cheese
    1 cup grated parmesan cheese
    1 cup sour cream
    1 loaf French bread
    1/2 cup shredded cheddar cheese

    Preheat oven to 350.
    Melt butter in a skillet over medium heat.
    Add garlic and sesame seeds.
    Saute until lightly browned.
    Remove from heat and stir in artichoke, monterey jack, parmesan and sour cream.
    Cut bread in half lengthwise.
    Scoop out center of each piece, leaving a 1 inch shell.
    Add approximately 1/2 of the removed bread pieces to the artichoke mixture.
    Stir to blend.
    spoon artichoke mixture into french bread shells and sprinkle with cheddar cheese.
    Place on baking sheet and cover with foil.
    Bake for 25 minutes.
    Remove foil and bake 5 minutes more.
    Cool slightly and cut into slices.

    12 servings
    Saute until lightly browned

    Awesome Pierogi Casserole

    5 potatoes, peeled and cubed
    1/2 cup milk
    1/2 cup butter, melted
    1/2 lb bacon, diced
    1 onion, chopped
    6 cloves garlic, minced
    8 ounces lasagna noodles
    2 cups shredded cheddar cheese
    salt and pepper
    1 (8 ounce) container sour cream
    3 tablespoons chopped fresh chives

    Preheat oven to 350 degrees.
    Place the potatoes in a large pot with water to cover over high heat.
    Bring to a boil and cook until the potatoes are tender.
    Remove from heat, drain, then combine with milk and 6 tablespoons of butter, mash and set aside.
    Melt the remaining 2 tablespoons of the butter in a large skillet over medium high heat.
    Saute the bacon, onions and garlic in the butter for 5 to 10 minutes, or until the bacon is fully cooked.
    Cook the lasagna noodles according to package directions and cool under running water.
    Place 1/2 of the mashed potatoes into the bottom of a 9x13-inch baking dish.
    Top this with 1/3 of the cheese, followed by a layer of lasagna noodles.
    Repeat this with the remaining potatoes, another 1/3 of the cheese and a layer of noodles.
    then arrange the bacon, onion and garlic over the noodles, then another layer of noodles, and finally top all with the remaining cheese.
    Season with salt and pepper to taste.
    Bake, uncovered at 350 for 30 to 45 minutes, or until the cheese is melted and bubbly.
    Serve with sour cream and chopped fresh chives.

    6-8 servings

    French Toast Bundt
    *Something a little different for a special occasion breakfast or brunch

    24 Rhodes dinner rolls or 12 Rhodes Texas rolls, thawed but still cold
    2 eggs
    1/3 cup liquid hazelnut coffee creamer
    3 tablespoons butter, melted
    1/2 teaspoon nutmeg
    1/4 teaspoon ginger
    2 tablespoons sugar
    1/2 teaspoon cinnamon
    1/2 tablespoon vanilla extract
    1/4 cup maple syrup
    powdered sugar

    Cut rolls in half forming 48 pieces (dinner rolls) or cut rolls in fourths (texas rolls).
    Mix other ingredients in a bowl except powdered sugar.
    Dip rolls in mixture and place evenly in bundt pan sprayed with non-stick cooking spray.
    Pour remaining mixture over rolls.
    Cover with plastic wrap and let rolls rise to top of pan (about 4 hours).
    Remove wrap and bake at 350 for 35 minutes.
    Invert onto serving platter.
    Drizzle with syrup and sprinkle with powdered sugar.
    Slice and serve with additional syrup as desired. Serves 12

    Spinach Bites
    Here's a simple appetizer that goes a long way!

    2 (10 ounce) packages frozen chopped spinach, thawed and well drained
    3 cups herb stuffing mix
    1 large onion, finely chopped
    6 eggs, well beaten
    3/4 cup melted butter
    1/2 cup grated parmesan cheese
    1 tablespoon pepper
    1 1/2 teaspoons garlic salt
    1/2 teaspoons thyme

    Preheat oven to 325.
    Combine all ingredients, mix well and shape into balls about 1/2 to 3/4 inch in diameter.
    Place on a baking sheet lightly sprayed with vegetagble cooking spray.
    Bake for 20 to 25 minutes.

    Makes 72-96 bites.
