    Citrus Burst Muffins



    Ingredients


    2 cups flour
    1/2 cup brown sugar
    1/4 cup sugar
    2 teaspoons baking powder
    1 teaspoon salt, optional
    3/4 cup milk
    1/2 cup orange juice
    1/2 cup oil
    1 egg
    1 cup Ocean Spray® Craisins® Orange Flavor
    Sweetened Dried Cranberries
    1/2 teaspoon orange zest
    1/3 cup chopped pecans
    Sugar




    Directions



    Preheat oven to 400ºF. Grease or line a 12-cup muffin tin.

    Combine flour, both sugars, baking powder and salt in a medium mixing bowl.

    Combine milk, orange juice, oil and egg in a separate mixing bowl. Add liquid ingredients to dry, stirring just until dry ingredients are moist. Stir in orange flavor sweetened dried cranberries and orange zest.

    Fill muffin cups 3/4 of the way full of batter. Sprinkle tops of muffins with pecans and sugar.

    Bake for 18 to 20 minutes or until golden brown. Cool 5 minutes in muffin tin. Remove muffins from tin; cool on a wire rack.

    Makes one dozen muffins.

    Cranberried Lemon Yogurt Bread

    Ingredients
    2 cups flour
    2 teaspoons baking powder
    3/4 teaspoon salt
    1/2 teaspoon baking soda
    1/4 cup butter or margarine, softened
    3/4 cup sugar
    1 cup lowfat yogurt, plain
    2 eggs
    1/4 cup lemon juice
    1 6 ounce package Ocean Spray® Original Craisins® Sweetened Dried Cranberries
    1 lemon, zest of 1

    GLAZE:
    1/2 cup powdered sugar
    2 tablespoons lemon juice
    1/2 teaspoon lemon zest

    Directions

    Preheat oven to 350ºF. Grease and flour a 9x5-inch loaf pan.

    Combine flour, baking powder, salt and baking soda in a large bowl; set aside.

    Using an exlectric mixer, beat butter or margarine and sugar in a medium mixing bowl, until light and fluffy. Add yogurt, eggs and lemon juice; mix well. Stir in sweetened dried cranberries and lemon zest. Add to dry ingredients. Stir just until dry ingredients are moistened.

    Spread batter evenly in pan. Bake 50 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool in pan 10 minutes. Remove from pan. Cool completely on a wire rack.

    Makes 1 loaf.

    Cranberry Almond Bread



    Ingredients


    2 cups flour
    1/2 cup sugar
    2 teaspoons baking powder
    1 teaspoon salt
    1 egg
    1/2 cup milk
    1/2 cup butter, melted
    2 teaspoons almond extract
    1 6-ounce package Ocean Spray® Craisins® Original Sweetened Dried Cranberries
    1 tablespoon sugar
    1/4 cup sliced almonds




    Directions



    Preheat oven to 375ºF. Grease an 8 1/2 x 4 1/2 x 2 inch loaf pan.

    Combine flour, sugar, baking powder and salt in a medium mixing bowl. Set aside.

    Combine egg, milk, butter, almond extract and sweetened dried cranberries in a medium mixing bowl. Add to dry ingredients; mixing just until the dry ingredients are moist. Spread batter in loaf pan. Sprinkle with sugar and almonds.

    Bake for 1 hour or until a toothpick inserted into center of loaf comes out clean.

    Makes 1 loaf.

    Cranberry Apple Bread



    Ingredients


    1 cup sugar
    1/4 cup butter or margarine, softened
    1/2 cup egg substitute
    1/4 cup applesauce
    1/4 cup skim milk
    2 cups flour
    2 teaspoons baking powder
    1 teaspoon cinnamon
    1/2 teaspoon salt
    1 cup peeled, chopped apple (about 1 large apple)
    1 cup Ocean Spray® Craisins® Original Sweetened Dried Cranberries
    1/4 cup chopped walnuts, toasted




    Directions



    Preheat oven to 350ºF. Lightly spray a non-stick 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with non-stick vegetable spray.

    Mix sugar and butter together in a medium mixing bowl until completely blended. Add egg substitute, applesauce, and milk; mixing well. Add dry ingredients, mixing just until moist. Stir in apples, sweetened dried cranberries and nuts.

    Spread batter evenly in loaf pan. Bake for 55 to 60 minutes or until a toothpick inserted into the center of the bread comes out clean.

    Makes 1 loaf.

    Cranberry Apricot Bread



    Ingredients


    1/3 cup sugar
    2 teaspoons yeast
    3/4 cup milk
    1/4 cup butter, melted
    2 eggs

    FILLING
    1 egg
    1 tablespoon water
    3 1/4- 3 3/4 cups flour
    1 cup Ocean Spray® Craisins® Original Sweetened Dried Cranberries
    1/2 cup apricot jam
    1/4 cup chopped walnuts
    1 tablespoon brown sugar
    1/4 teaspoon cinnamon
    1/8 teaspoon nutmeg




    Directions



    Combine 2 cups flour, sugar and yeast in a medium mixing bowl. Combine milk and butter and heat to a temperature of 120ºF - 130ºF. Add to dry ingredients, mixing thoroughly. Add eggs; mix well. Add enough of remaining flour to make a soft dough that is not sticky when handled.

    Lightly grease a medium mixing bowl. Place dough in bowl and roll around so that it is lightly covered with grease. Place bowl with dough in a warm place until it has doubled in size. Set aside. Meanwhile, combine egg and water in a small mixing bowl; set aside. Combine filling ingredients in a medium saucepan. Cook on low heat until jam has melted, stirring occasionally.

    Bake at 350ºF. Grease a cookie sheet.

    Punch down dough and place on a floured surface. Roll into a 13 x 11-inch rectangle. Cut into 3 11 x 4-inch strips.

    Spread about 1/3-cup filling on each strip, leaving 1/4-inch all around. Brush egg mixture on edges. Fold strips over lengthwise, pressing to seal edges. Place seam side down on cookie sheet. Repeat with other 2 strips.

    Braid the 3 strips. Press ends together to seal, tucking underneath braid. Brush with egg mixture. Cover and let rise in a warm place until double in size.

    Bake for 30 minutes or until golden brown.

    Makes 1 loaf.

    2 cups flour

    Combine flour, brown sugar, baking powder and salt in a medium mixing bowl. Stir in sweetened dried cranberries and pecans. Combine remaining ingredients in a separate mixing bowl. Add to dry ingredients, mixing just until the dry ingredients are moist.

    Fill each muffin cup 2/3 of the way full with batter. Sprinkle sugar on top of each muffin. Bake for 25 minutes or until golden brown. Cool 5 minutes in pan; remove to a wire rack to cool completely.

    Ingredients


    1 cup Ocean Spray® Craisins® Original Sweetened Dried Cranberries
    1 20-ounce can pineapple tidbits, reserving 1/4 cup juice
    1/4 cup chopped red pepper
    1/4 cup chopped fresh cilantro
    2 tablespoons chopped red onion
    1 tablespoon jalapeno pepper, seeded and minced
    2 teaspoons lime peel, freshly grated
    1/4 teaspoon salt




    Directions



    Combine all ingredients in large bowl and mix well. Cover and refrigerate for 2 hours to allow flavors to blend. Serve with fish, poultry or meat.

    Makes 3 cups.

    Ingredients


    SALAD:
    5 cups broccoli florets, cut into 1/2-inch pieces
    1/2 cup chopped red onion
    1 cup shredded sharp Cheddar cheese
    1 cup cooked and crumbled bacon pieces
    1 cup sunflower kernels
    3/4 cup Ocean Spray® Craisins® Original Sweetened Dried Cranberries

    DRESSING:
    1 cup salad dressing or mayonnaise
    1/4 cup sugar
    2 tablespoons red wine vinegar
    1/2 teaspoon salt
    1/4 teaspoon pepper




    Directions



    Combine all salad ingredients in a large mixing bowl; mix well. Combine dressing ingredients in a small mixing bowl. Mix until thoroughly combined using a fork or wire whisk. Add dressing to salad and mix well. Refrigerate 1 hour.

    Makes 8 to 10 servings.

    Ingredients


    1/2 head red cabbage, shredded
    1/2 red onion, thinly sliced
    3 green onions, white and green parts, sliced
    6 tablespoons olive oil
    2 tablespoons red wine vinegar
    2 tablespoons sugar
    1 teaspoon salt
    1/2 teaspoon ground black pepper
    1/2 teaspoon cumin
    1/4 teaspoon ground mustard
    1 6-ounce package Ocean Spray® Craisins® Original Sweetened Dried Cranberries




    Directions



    Mix together cabbage and red and green onions in large mixing bowl. Whisk oil, vinegar, sugar, mustard, salt, pepper and cumin together in a small bowl.

    Pour over cabbage mixture; add sweetened dried cranberries, mix thoroughly. Marinate in refrigerator for 1 hour. May be made up to 6 hours in advance.

    Makes 6 servings.

    Cranberry Mint Marinated Cucumbers



    Ingredients


    4 cups cucumbers, peeled, scored, sliced into 1/4 inch rounds
    2 teaspoons Kosher or table salt
    1/2 cup Ocean Spray® Light Cran•Raspberry® Cranberry Raspberry Juice Drink
    2 tablespoons balsamic vinegar
    2 tablespoons fresh mint leaves, finely chopped
    1 tablespoon red onion, finely chopped




    Directions



    Peel cucumbers. Holding a fork with tines facing down, drag the tines down the length of the cucumber. Continue until all sides are scored. Cut into 1/4 inch slices.

    Toss sliced cucumbers with salt in a large mixing bowl. Place slices in a colander or sieve over a mixing bowl to drain for 1 hour. Meanwhile, pour juice into a small mixing bowl. Add balsamic vinegar and fresh mint.

    After 1 hour, drain cucumber slices and pat dry with paper towels to remove excess moisture. Place in medium glass mixing bowl, add red onion and pour marinade over mixture. Toss to coat. Cover and refrigerate for 1 hour or more to blend flavors.

    Keep refrigerated for up to a week in a tightly sealed container. Makes about 6 1/2-cup servings.

    1 bag Ready Pac® European-Style Baby Spinach Salad
    1/2 cup Ocean Spray® Craisins® Original Sweetened Dried Cranberries
    1/2 cup Ready Pac® Diced Red Onions

    DRESSING
    4 slices bacon or turkey bacon, cooked crisp and crumbled
    1/2 cup plain or orange-flavored honey
    1/2 cup lime juice
    2 tablespoons Dijon mustard




    Directions



    Divide Ready Pac® European-Style Baby Spinach evenly among 4 salad plates. Top each with 2 tablespoons Ocean Spray® Craisins® Original Sweetened Dried Cranberries and Ready Pac® Diced Red Onions.

    Combine dressing ingredients in a small glass-mixing bowl using a wire whisk. Heat in the microwave on HIGH for 1 minute or until warm. Drizzle over salad and serve immediately.

    Ingredients


    2 teaspoons olive oil
    1 cup uncooked basmati or regular long grain rice
    1 clove garlic, minced
    1 14 1/2-ounce can chicken broth
    1/4 teaspoon ground black pepper
    1/2 cup Ocean Spray® Craisins® Original Sweetened Dried Cranberries
    1/4 cup sliced green onions, with tops
    1/4 cup coarsely chopped slivered almonds




    Directions



    Heat oil in large saucepan over medium heat until hot. Add rice and garlic; cook 1 to 2 minutes or until rice is coated with oil and garlic is fragrant.

    Stir in broth and pepper. Cover; bring to a boil. Reduce heat; simmer 10 minutes. Stir in cranberries. Cook 7 to 10 minutes longer or until liquid is absorbed and rice is tender. Fluff rice with fork; stir in onions and almonds. If desired, garnish with additional sliced green onions.

    Makes 5 (2/3 cup) servings.
