Turkey with Mushroom Sauce

1 (3-pound) boneless turkey breast -- halved
2 tablespoons butter or margarine -- melted
2 tablespoons dried parsley flakes
1/2 teaspoon dried tarragon
1/2 teaspoon salt -- optional
1/8 teaspoon pepper
1 (4-1/2-ounce) jar sliced mushrooms (or 1 cup sliced fresh mushrooms)
1/2 cup white wine or chicken broth
2 tablespoons cornstarch
1/4 cup cold water
Place the turkey, skin side up, in a slow cooker. Brush with butter. Sprinkle with parsley, tarragon, salt if desired and pepper. Top with mushrooms. Pour wine or broth over all. Cover and cook on low for 7-8 hours. Remove turkey and keep warm. Skim fat from cooking juices. In a saucepan, combine cornstarch and water until smooth. Gradually add cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the turkey.

1 (14-ounce) can jellied cranberry sauce
1/2 cup plus 2 tablespoons water -- divided
1 envelope onion soup mix
2 tablespoons cornstarch
Cut each turkey breast in half; place in a 5-qt. slow cooker. In a bowl, combine the cranberry sauce, 1/2 cup water and soup mix; mix well. Pour over turkey. Cover and cook on low for 4-6 hours or until turkey is no longer pink and a meat thermometer reads 170'. Remove turkey and keep warm. Transfer cranberry mixture to a small saucepan. In a bowl, combine the cornstarch and remaining water until smooth. Bring cranberry mixture to a boil; stir in cornstarch mixture. Cook and stir for 2 minutes or until thickened. Slice turkey; serve with cranberry sauce.

1/2 cup chopped celery
1/4 cup chopped green pepper
1 (10-3/4-ounce) can reduced-fat reduced-sodium condensed tomato soup -- undiluted
1/2 cup ketchup
1 tablespoon brown sugar
2 tablespoons prepared mustard
1/4 teaspoon pepper
8 hamburger buns -- split
In a large saucepan coated with non-stick cooking spray, cook the turkey, onion, celery and green pepper over medium heat until meat is no longer pink; drain if necessary. Stir in the soup, ketchup, brown sugar, mustard and pepper. Transfer to a slow cooker. Cover and cook on low for 4 hours. Serve on buns.

1 (16-ounce) can whole-berry cranberry sauce
1/2 cup sugar
1/2 cup apple juice
1 tablespoon cider vinegar
2 garlic cloves -- minced
1 teaspoon ground mustard
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
2 tablespoons all-purpose flour
1/4 cup cold water
1/4 teaspoon browning sauce -- optional
Place the turkey skin side up in a 5-qt. slow cooker. Combine the cranberry sauce, sugar, apple juice, vinegar, garlic, mustard, cinnamon, cloves and allspice; pour over turkey. Cover and cook on low for 5-6 hours or until a meat thermometer reads 170'. Remove turkey to a cutting board; keep warm. Strain cooking juices. In a saucepan, combine flour and water until smooth; gradually stir in strained juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in browning sauce if desired. 1/2 cup half-and-half cream or milk

In a slow cooker, combine wine or broth, onion, garlic and bay leaves. Combine rosemary and pepper; rub over turkey. Place in slow cooker. Cover and cook on low for 7-8 hours or until meat is tender. Remove turkey and keep warm. Strain cooking juices; pour into a saucepan. Combine cornstarch, cream and salt until smooth; gradually add to juices. Slow Cooked Italian Turkey Breast
Servings: 8
4 to 6 pound boneless turkey breast roast
2 cup water
2 package dry zesty Italian salad dressing mix
Place thawed turkey breast in 6 quart crock pot. Cook on high 8 hours or until meat thermometer reads a temperature of 180F when placed in the thickest part of the meat, not touching the bone.
Take breast out of cooker. Remove the meat from the bone and slice or shred.
Make gravy with cornstarch and remaining broth. Serve on toasted bun with gravy.
This turkey is also great as an entree served with salad and vegetables.

Crock-Pot Turkey Breast Recipe
1 turkey breast (6 to 6-1/2 pounds), frozen (see note)
2 t. vegetable oil
Salt and black pepper, to taste
1 medium onion
4 garlic cloves
Rinse the turkey and pat it dry with paper towels. Rub the turkey all over with the oil. Sprinkle the breast lightly with salt and pepper to your preference. Place the breast, meaty side up, into a 5-quart slow cooker.
Peel the onion, cut it into quarters, and place the pieces around the edges of the pot. Peel the garlic cloves and place them around the sides of the cooker. Cover the cooker and cook the breast on low for 9 hours, or until a meat thermometer registers 170° F.
Remove the breast from the cooker (discard the vegetables) and let the bird stand at least 15 minutes before slicing. (The internal temperature will continue to rise while the bird is standing.)
Makes about 8 servings.

Ingredients
1 large onion, chopped
3 cloves garlic, minced
1 teaspoon dried rosemary
1/2 teaspoon black pepper
1 boneless skinless turkey breast (2 to 3 pounds)
1-1/2 cups orange juice
Slow Cooker Directions
1. Place onion in slow cooker. Combine garlic, rosemary and pepper in small bowl; set aside. Cut slices about three-fourths of the way through turkey at 2-inch intervals. Rub garlic mixture between slices.
2. Place turkey, cut side up, in slow cooker. Pour orange juice over turkey. Cover; cook on LOW 7 to 8 hours.
3. Serve sauce from slow cooker with sliced turkey.

Crock-Pot Turkey Breast with Cranberry Dressing

1 (8-ounce) package stuffing cubes
1/2 cup hot water
2 tablespoons butter, softened
1 small onion, chopped
1/2 cup celery, chopped
1/4 cup sweetened dried cranberries
1 (3-pound) boneless turkey breast
1/4 teaspoon dried basil
1/2 teaspoon salt
l/2 teaspoon black pepper
Coat a 3 1/2 quart (or larger) slow cooker with nonstick vegetable spray.
Put stuffing cubes in the cooker and add water, butter, onion, celery, and cranberries; mix well.
Sprinkle the turkey breast with the basil, salt, and pepper. Place the turkey over stuffing mixture. Cover and cook on the low setting for 6 to 7 hours.
Remove turkey to a cutting board and slice. Stir the stuffing until thoroughly mixed and allow to sit for 5 minutes. Spoon onto platter and top with the sliced turkey.
Serves 4 to 6.

Ingredients:
4 to 5 pound boneless turkey breast, thawed if frozen
1 cup salsa
2 tablespoons honey
1 tablespoon chopped chipolte chili in adobo sauce (from 7 ounce can)
2 tablespoons cornstarch
2 tablespoons water
Instructions:
Spray 5 to 6 quart slow cooker with cooking spray. Place turkey in cooker. Mix salsa, honey and chili in small bowl; pour over turkey.
Cover and cook on low heat setting 7 to 8 hours.
Remove turkey from cooker; cover to keep warm. Pour juices from cooker into 4 cup microwavable measuring cup. Mix cornstarch and cold water in small bowl until smooth; stir into juices in cup. Microwave uncovered on high 3 to 5 minutes, stirring every minute, until mixture boils and thickens. Serve with turkey.

Cranberry Stuffed Turkey Breast
This excellent recipe is a perfect choice for smaller families for the Thanksgiving feast in America.
Ingredients:
3 cups stuffing mix
1/2 cup butter
1 onion, chopped
1 cup dried cranberries
1 Granny Smith apple, cored and chopped
1 5 lb. turkey breast, thawed if frozen
1 tsp. salt
1/4 tsp. pepper
1 tsp. dried thyme leaves
1/2 tsp. poultry seasoning
additional melted butter
Directions:
Place stuffing mix in large bowl. In heavy skillet, melt butter and add onion. Cook and stir until onion is translucent. Stir in cranberries and apple and saute for 4-5 minutes. Pour over stuffing mix in bowl and mix gently. Season with salt, pepper, thyme, and poultry seasoning. Place this mixture in bottom of 5-6 quart crockpot. Place turkey breast over stuffing. Brush with more melted butter, then cover crockpot and cook on LOW for 8-9 hours until turkey registers 180 degrees on instant read meat thermometer. 6 servings
Serving Suggestions:
Serve with mashed potatoes, bakery rolls, a crisp green salad, and pumpkin pie for a nice alternative Thanksgiving dinner.

Recipe for a roasted turkey breast in the slow cooker, or crockpot.
Prep Time :

Cuisine : U.S. Regional
Occasion : Boxing Day, Christmas, Family Dinner, Thanksgiving
INGREDIENTS:
1 4 to 5 pound boneless turkey breast, with skin, or about 2 1/2 pounds for a 3 1/2-quart crockpot
1/4 cup chopped fresh parsley
1 tablespoon fresh thyme leaves
1 tablespoon grated lemon rind
2 tart apples, peeled,cored,chopped
4 medium leeks (white part & 1-inch pale green), rinsed,sliced thinly
1 cup chicken broth
1/2 cup dry white wine
2 tablespoons butter, room temperature
2 tablespoons all-purpose flour
PREPARATION:
Rinse turkey breast and pat dry. Lightly pound breast and, with your fingers, separate skin from breast meat. Combine parsley, thyme, and lemon rind. Rub turkey inside and under the skin with the herb mixture; replace skin and tie in place with kitchen twine.
Arrange apples and leeks in bottom of 5-quart or larger slow cooker (for a smaller slow cooker, use a 2 to 2 1/2 pound turkey breast). Top with turkey breast, skin side up. Drizzle lemon juice over turkey breast. Cover and cook on low for 8 to 10 hours or on high for 3 1/2 to 4 hours, until tender.
Transfer breast to a serving platter and keep warm. (Brown for 5 minutes under a preheated broiler for browned skin.) Let turkey breast stand for 10 minutes before carving.
Turn setting to high. Whisk broth and wine into the juices in the slow cooker. In a small bowl, combine the butter and flour. Whisk into the slow cooker and cook, uncovered, stirring occasionally, until thickened and bubbly, about 15 minutes. Cook and stir for another minute. Pour sauce into a serving dish and spoon over breast slices.
