    Brown it, cover it with mushroom soup in a crock pot.Cook on low all day. Serve over noodles or rice.

    I like to lightly coat with seasoned flour, brown in hot oil and put in a casserole dish with a can of consomme and bake until tender. Thicken the juices and serve over noodles, like beef tips and gravy.

    Beefy Macaroni Vegetable Soup

    1 lb stew beef, cubed
    1 tsp oil
    1 onion, diced
    2 stalks celery, chopped
    16 oz can stewed tomatoes
    1 bay leaf
    2 qts water
    4 carrots, peeled and sliced
    14 1/2 oz can green beans, drained
    1 cup macaroni, uncooked

    Brown stew beef in oil. Add onions and celery; cook until tender. Blend in stewed tomatoes, bay leaf, water and carrots. Simmer for at least 2 hours. Stir in green beans and uncooked macaroni. Bring to a boil, reduce heat, and simmer for 20 minutes. Add a little additional water if necessary.

    Because it's tough, you'll have to stew or braise it one way or another. This is a bit different. You might also try a curry of some kind. Or a carbonnade (onions and beer) I am making this today. It sounds easy and good, but I haven't tried it yet.

    Hungarian Goulash

    3 onions, sliced
    1/3 cup vegetable oil
    2 tablespoons paprika
    2 teaspoons salt, to taste
    1/2 tsp pepper
    3 pounds stewing beef, cut in 1 1/2 inch cubes
    1 can (5 1/2 oz) tomato paste
    1 1/2 cups water
    1 clove garlic crushed
    1/2 cup sour cream, if desired

    In Dutch oven, cook onions in oil until tender, stirring frequently; remove and reserve onions. Combine paprika, 1 1/2 tsp salt and 1/2 tsp pepper. Coat meat with this mixture. Brown meat in drippings; return onions to pan.
    Stir in tomato paste, water, garlic and remaining 1/2 tsp salt. Simmer, stirring occasionally for 1 1/2 to 2 hours or until meat is tender.
    (If too thick, stir in a bit more water)
    Garnish with sour cream. Serve with buttered noodles.
    Serves 6 to 8.

    Thanks guys! I needed an idea for supper and I do have a package of stew meat. I'll make the vege soup in the pressure cooker... or maybe the Goulash. Now I have to decide.

    Beef Stroganoff

    1 1/2 lbs beef stew meat, cut into 1" cubes
    1 Tbsp cooking oil

    2 c. mushrooms (2 4oz cans)
    1/2 c onions, chopped
    2 cloves minced garlic (i use the minced garlic in the jars)
    1/2 tsp dried oregano
    1/4 tsp salt
    1/4 tsp thyme
    1/4 tsp pepper
    1 1/2 c beef broth
    1/3 c dry sherry ( I just substitue more beef broth)


    1 8 oz carton sour cream (I use light s.c.)
    1/2 c flour
    1/4 c water

    Brown beef, half at a time, in hot oil. Drain fat
    In a 3 1/2 quart crock pot, combine beef, mushrooms
    onions, garlic, & seasonings. Pour beef broth & sherry
    over all. Cover, cook on low for 8 hours, or high for 4 -5
    hours. If using low, turn to high 45 minutes before
    done. Mix together sour cream, flour, & water.
    Stir about 1 cup of the hot liquid into sour
    cream mixture. Return all to cooker; stir to
    combine. Cover & cook till thickened &
    bubbly. Serve over hot noodles (i use
    egg noodles but you could use whatever
    you like!).

    Subject: Rec Rev: Gaudrey's Osso Bucco (Delicious!!!!)

    I made this today after seeing another post. All I can say is I'm sorry I didn't know about it before. It's a keeper! I used bone-in beef short ribs. I used two cups liquid because the guys like a lot of gravy (I added Marsala wine for part of the liquid; I had pasta sauce left over from Thanksgiving, so I used a cup of that rather than crushed tomatoes.)     Osso Bucco

    This is my family's favorite stew. We like it over poppy seed noodles with toasted Italian bread and a tossed salad.

    Osso Bucco

    1/4 cup olive oil
    2 pounds veal shanks (I usually use beef short ribs.)
    2 teaspoons Lawry's seasoned salt
    1/4 teaspoon black pepper
    Flour for coating
    1 teaspoon Mrs. Dash Clasic Italiano seasoning
    1 clove garlic, minced
    2 tablespoons finely minced celery
    1/2 cup coarsely grated carrots
    2 tablespoons minced fresh flat leaf parsley (or 2 teaspoons dry parsley)
    1 cup canned crushed tomatoes
    1 cup beef bouillon
    1 tablespoon arrowroot (or cornstarch)
    2 tablespoons cold water

    Heat oil in a heavy skillet. Season meat with the salt and pepper, and coat well with flour. Brown on all sides in hot oil. Add Italian seasoning, garlic, celery, carrots, parsley, and tomatoes. Stir in bouillon. Cover and simmer until meat is very tender, but not falling off the bone, about 1 1/2 to 2 hours. Check occasionally and if necessary add a little water to maintain 2 cups liquid. When tender, mix arrowroot and cold water. Stir into the stew gradually, continuing to stir until thickened. Serve over Poppy Seed Noodles Makes 4 servings.
    POPPY SEED NOODLES:
    Cook 4 ounces of medium width noodles as directed on package. Drain well. Mix 1/4 cup melted butter with 1 teaspoon poppy seeds and toss with the noodles. Serve at once. 4 servings.

    I use stewing beef for my vegetable soup. Just season and brown the meat. Then add V-8 and beef boullion for the base. I then add carrots, celery, onions and potatos. When it is about 30 minutes from being done, I add some canned vegetables like corn and green beans. Sometimes I also add a can of Rotel with the V-8 to give it a little kick. This is so simple and the meat comes out very tender.

    The other day I used some stew meat (I had already cooked it) in a pot pie. I took the stew meat, a lb. of hamburger I needed to use, an onion (cooked with the ground beef), cooked carrots, and a couple of cups of beef gravy, mixed them together, then topped with a single crust. It turned out yummy! :)

    I just posted this on another thread the other night. My family loves this:

    Stuffed Cabbage Soup
    (source: Family Circle ???date)

    1 Tbsp oil
    1 lb stew beef, cut into small chunks (could also use 1 lb hamburg)
    1 pkg coleslaw mix
    1 large onion, chopped
    1 28oz can crushed tomatoes (I use Dei Fratelli italian tomatoes)
    2 cans beef broth
    1 cup water
    1/2 cup brown sugar
    1 Tbsp lemon juice
    1 tsp salt
    1/3 cup long grain white rice

    1) Heat oil in Dutch oven over medium heat. Add beef; saute until brown. Add coleslaw mix and onion. Cook, covered, 4 mins stirring after 2 mins. Add tomatoes, beef broth, water, brown sugar, lemon juice and salt

    2) Bring to boil. Add rice; reduce heat to medium-low. Simmer, covered 45 mins or until beef and rice are tender.
