  • Amish Wedding Recipes
    Potato Salad
    2 kettles cooked potatoes, shredded
    3 C. carrots, cooked and shredded
    3 C. celery, chopped
    Finely diced onions, opt.
    10 hard-boiled eggs, cooled and diced
    Toss together.
    5 C. salad dressing
    2 1/2 C. white sugar
    5 T. vinegar
    5 T. mustard
    3 tsp. salt
    Mix together the dressing and pour and mix in with vegetables. Makes 7 kettles altogether. For 85 families.

    1 C. diced onions
    2 C. diced celery
    16 tsp. salt
    3 tsp. celery seed
    2 tsp. mustard seed
    19 Ibs. cabbage
    Makes enough for 150 people.

    Potato Salad
    6 gal. potatoes
    24 eggs, cooked
    6 C. chopped celery
    2 C. chopped onions
    6 qt. water
    6 T. salt
    3 C. vinegar
    1 C. mustard
    14 C. sugar
    1 gal. Miracle Whip
    Mix all except for Miracle Whip. Thicken with 2 1/2 C. clear jel. Cook 10 minutes. Add Miracle Whip.

    French Dressing
    6 C. vinegar
    6 C. oil
    6 C. ketchup
    2 T. salt
    2 T. garlic salt
    24 C. sugar
    Whip till sugar is all melted.

    Broccoli and Cauliflower Salad
    12 heads cauliflower, chopped
    12 heads broccoli, chopped
    48 eggs, hard-boiled and finely chopped
    10 lb. bacon, fried and crumbled
    10 lb. shredded cheese

    1 C. mayonnaise
    1/2 C. sugar
    1 C. sour cream
    1/2 tsp. salt
    Mix the vegetables, eggs, bacon and cheese. Mix together dress­ing. Pour and mix in with vegetables. This was for a day wedding, but it wasn't enough for all the young folks in the evening.

    Broccoli Salad
    18 heads broccoli
    27 heads cauliflower
    25 Ibs. bacon
    10 Ibs. shredded cheese

    3 1/2 gal. salad dressing
    15 c. white sugar
    4 pts. sweet-n-sour dressing
    Chop vegetables fine and cut up fried bacon. Mix altogether with cheese. Mix dressing together. Add to vegetables. It was plenty for 112 families.

    Quick Dinner Buns
    3 C. milk
    2 C. water
    4 T. yeast
    4 eggs
    4 T. butter, melted
    1 1/2 C. white sugar
    2 tsp. salt
    Thesco flour
    Scald milk and cool. Put yeast in water and let stand for 5 minutes. Beat eggs. Add sugar, salt and butter, then add cooled milk and yeast mixture. Add flour. Mix well. Let rise until double. Shape into buns and let rise again. Bake at 350 for 15-20 minutes. Makes about 70*­75 buns. If you make 6 or 7 batches, it should be plenty for 112 families.

    10 Ibs. hamburger
    2 C. tomato juice
    10 eggs
    8 tsp. salt
    1/2 lb. crackers
    1 1/2 tsp. pepper
    4 1/2 C. water
    2 T. mustard
    Bake at 350 for about one hour. Put ketchup or BBQ sauce on when almost done baking.

    55 lbs. hamburger
    For one bowl:
    9 tsp. salt
    6 eggs, beaten
    Chopped onions
    Chopped celery
    1 qt. tomato juice
    2 C. oatmeal
    4 C. cracker crumbs
    Heaping hand of mashed potatoes

    Put 11 Ibs. of hamburg into 5 mixing bowls. Work ingredients in by hand. Makes 16 pans. This is for an evening supper. Top with BBQ sauce and bake at 350 for one hour.

    Meatloaf (1 batch)
    10 Ibs. hamburger
    1 C. ketchup
    3 C. cracker crumbs
    6 tsp. salt
    5 eggs
    1 1/4 tsp. pepper
    2 C. water
    3 T. sloppy joe mix-mix w/water
    Mix altogether with hands and press into pans. Bake at 350° for approx. one hour.

    265 Ibs. chicken
    4 C. chicken flour or
    2 C. flour +2 C. Bisquick
    4 C. cracker meal
    3 T. salt
    2 T. sugar
    1 T. paprika
    6 T. Lawry's salt
    5 tsp. garlic salt
    5 tsp. black pepper
    6 tsp. Accent

    Start to fry at 5:00. Use prep and butter to fry. You need 6 women to fry. Each should bring a fix and mix bowl to shake chicken. Bake 1 hr. at 350°.

    260 Ibs. chicken
    Clean and put salt on layers and put in cooler. On the morning of the wedding melt 2 sticks oleo. Add 3 C. prep. Heat till warm. Dip chicken then roll in crumbs.
    12-13 Ibs. Rice Krispies
    2 Ibs. Ritz crackers
    1 1/2 Ibs. Lawry's salt
    2 1/2 Ig. boxes Shake-N-Bake (you may use some hot)

    Makes about 4 gal. I use some Cajun seasoning with onions.
    Put chicken on foil covered cookie sheets. Spray lightly with Pam.
    Bake in oven uncovered at 350° for 1/2 hr. Then move to top rack and bake another 1/2 hr. Put in roasters, cover. It takes around 27 cookie sheets and 18 roasters.

    Mashed Potatoes
    1 stick oleo
    1/2 stick cream cheese
    1/2 can evaporated milk, not hot
    2 T. salt
    Add this to 1 kettle of potatoes. Heat enough milk to finish it. 15-16
    kettles is plenty for 112 families. Use 6 qt. kettles.

    Potluck Potatoes
    22 Ibs. potatoes
    1 lb. butter
    2 1/2 pts. sour cream
    2 boxes Club crackers or cornflake crumbs
    2 #5 cans cream of chicken soup
    1 - 2 lb. box Velveeta cheese
    6-7 Ibs. ham, chopped (opt.)
    Cook potatoes; chill and cube. Melt 1/2 lb. butter; add sour cream, soup and cheese. Stir until heated, then add potatoes. Melt remain­ing butter and add to cracker crumbs. When potatoes are almost done baking at 325°, put crumbs on top and brown. Serves 75.

    these recipes are great! One of these days maybe I;ll know enought people that I could make one of them!
