RUMAKI - Chicken Livers wrapped in Bacon w/ water chestnuts!

    This is a great recipe and will disappear fast - but it does take a little preparation and planning. It is worth the trouble, though.

    RUMAKI - Chicken Livers w/ water chestnuts wrapped in bacon

    1 1/2 lbs. bacon
    1 lb. chicken livers
    1 lb. box dark brown sugar
    1 small bottle soy sauce
    3 to 4 whole cloves of garlic
    2 cans (small) water chestnuts - sliced

    Cut livers in smaller pieces - halves or thirds, depending on size - use kitchen shears - easiest
    Put in GLASS bowl (fairly large) and pour bottle of soy sauce over livers.
    Add garlic cloves and let marinate overnight or for about 8 to 10 hrs. Drain off soy sauce and remove cloves. Put box of brown sugar over livers and use your hands to work up the sugar until "slurpy".
    Next, cut water chestnuts in about 3 slices - if not sliced (save yourself some time and buy the sliced). Cut bacon package in half. Take bacon piece half, slice of water chestnut and piece of liver - wrap and secure w/ toothpick.
    Bake in preheated 400 degree oven for about 20 to 30 minutes - watch after 20 minutes - or until livers are brown, not black. They will look almost burned - but this is good as that is when they are GREAT! I hope some of you will try this - it will take some preparation - but it is really worth it!

    I've eaten these for years and they are wonderful!! Haven't made them in quite a while but sure would enjoy eating a bunch of them!!
