    Cheesy Taco Soup

    2lbs ground beef
    1/2 cup chopped onion
    2 packets dry Ranch dressing mix
    2 packets dry Taco seasoning mix
    1 can chili hot beans, undrained
    1 can black beans, undrained
    1 can kernel corn, undrained
    1 large can diced tomatoes,undrained
    1 can Ro-Tel (I use extra hot),undrained
    1 lb Velveeta- cut into chunks
    3 cups water
    Brown beef, breaking into small pieces. Drain. Add all other ingredients except cheese. Stir and let simmer for 20 minutes. Add more water if needed. Add Velveeta cheese and stir until it melts. Serve with Frito scoops and a dollop of sour cream if desired. Sooooo good. The ranch dressing and taco seasoning mixes really make this soup. You can adjust the "heat" of this by replacing the can of diced tomatoes with another Rotel to make it spicier (I do this but beware - it is very spicy), or make it milder by using mild Rotel or 2 cans of regular diced tomato. This is a very versitle recipe. Tweak it to fit your tastes. We like this better than regular chili now.

    Recipe is very easy to cut in half as this makes a big batch. We also love it made with ground venison in place of ground beef.
