Marty's Spicy Spare Ribs

    Marty's Spicy Spare Ribs

    3 lbs baby back ribs, or regular ribs cut lengthwise to about 2" pieces

    Mixture "A"
    2 slices ginger root, minced
    2 spring onions, minced

    Mixture "B"
    1 T. rinsed, mashed FERMENTED black beans - NO substitute!
    1 clove garlic, minced

    Mixture "C"
    4 T. light soy
    4 T. hoisin sauce
    4 T. honey
    1 T. rice wine or dry sherry
    1 c. chicken stock

    Note: If using regular spareribs, have the butcher cut strips lengthwise so that each rib when separated will be about 2" long. Separate ribs into single pieces and remove all excess fat.

    Heat wok till smoking hot. Add 2 T. oil, stir fry mixture "A" until aromatic. Add rib pieces and stir fry until seared. Add mixture "B", stir one minute, mixing well. Add mixture "C" stir fry one minute until meat is well coated. Simmer UNCOVERED about 30 mins. until liquid is reduced to a very thick syrup, stirring frequently. (Be patient, it will get there). Ribs will get a dark glazed look.

    Remove to a baking dish with grid and keep in warm oven until ready to serve.

    Instead of using ribs, this is also a GREAT recipe for chicken wings and drumsticks.

    Serve on a heated platter with plenty of paper napkins.

    Texasrosell - Oh, my gosh! That is the recipe. I remembered the Mixture A, B, C stuff. This recipe is great. Anyone that likes Chinese food, will like this, I'm sure. The only thing is I had trouble finding the fermented black beans. I will have to look for them again. I would like to hear some reviews if you try this. Thanks again, Texasrosell. Eaner

    I think this has to be the recipe that Marty sent me the fermented black beans so I could make it. All his recipes were good, as is this one. I couldn't find the fermented black beans where I was living at the time and will have to check in the regular grocery stores to see if they are easier to find now than they were in the late 80's. I think that's when I tried the recipe. Hope you enjoy and can find the beans.

    Texas, thanks for the post, sounds tasty. When Harrah's had the casino in downtown Shreveport which is now Sam's Town they had some ribs like this on the buffet. Since Sam's has taken over they no longer make them. I would eat these type of ribs before I would eat their barbecued ribs.

    Texas, if you like Marty's recipe you will like the Char Siu ribs with the mix. You can also make chicken wings or thighs with it. In Hawaii they serve these as pupu's.

    Oh Boe, I love the chicken wings in the red sauce at Chinese places. Didn't know it was the Char Siu. I'm going to make these soon.

    Yeah, I looked at Walmart today but they don't even have a black bean sauce. Maybe this weekend I can get down to Central Market and look there. This was my problem last time. Couldn't find the fermented black beans. Not sure where there are any Asian markets in SA. I know they have them.

    I was waiting to get a decent pork roast to use Boe's envelope of Char siu but now I might just try it on some drummies. I can get some good ones over at Walmart. Very meaty and should work great.

    Texas, you will always find an Asian market within a mile or two of a military base. When the GI's marry an oriental, either them or a relative always opens a small market near the bases. I bet there is one near Universal City.
