    Pan Gravy:

For each cup of medium gravy - use 2 T. fat (pan drippings or add fat, if necessary), 2 T. flour - mix together in the pan and cook over low heat, stirring steadily, until it's all bubbly and brown.

Add one cup liquid (all OR part milk - can also include meat stock or bouillon-cube broth).

Stir in liquid, taking pan off heat to avoid lumps. Return pan to heat, stirring and scraping in the rich drippings. Boil 1 minute, season, and serve.

Sometimes I add a little instant milk (Carnation instant nonfat milk) to the potato water to make it look creamier, or more milky looking.
