English Pea Salad

    English Pea Salad

    2 17oz can Le Sueur green peas
    8 oz sharp cheddar cheese
    1 4oz jar pimento
    1 c celery, finely chopped
    1 Tbl grated onion
    1/4 tsp salt
    1/4 c mayo
    1-2 sliced tomatoes
    3-4 sprigs fresh parsley
    6-8 lettuce leaves

    Drain peas on paper towel. Peas must be very dry. Grate or cube cheese into tiny pieces. Drain and dice pimento, leaving 2 pieces whole for garnish. Combine peas, cheese, pimento, celery, onion, salt and mayo(use only enought mayo to moisten salad) Toss gently; don't mash peas. chill well before serving. Serve on lettuce leaves surrounded by sliced tomatoes and parsley. Serves 10-12

    Hey thanks I love Pea Salad. My mom used to make Tuna Pea Wiggle. I think I liked it just to hear the name. Down south they make a layered pea salad that is very good too. I don't know the recipe though. Cfnier

    HI,
    I'm from the South and I know the salad you're talking about. This is my recipe:

    SEVEN LAYER SALAD

    (layer as ingredients listed in 13 x 9 glass dish or larger)


    1 head iceberg lettuce chopped
    celery (enough to make a layer) chopped
    1 large onion (red makes it pretty) chopped
    1 box frozen English peas (I use the LeSeuer canned peas, I like them better)
    1 layer of crumbled bacon or cheddar cheese graTED
    MAYONNAISE (ENOUGH TO COVER TOP TO SEAL)
    1/2 CUp PARMESAN CHEESE gRATED (SPRINKLE ON TOP OF MAYO)
    cover with lid or plastic wrap . Put in refrigerator overnight or several hours.
    This is a great make ahead dish for a potluck and everyone loves it!
