last minute request for potluck ideas HELP!!!
Hi All,
I know its's late but I have a potluck tomorrow . I'm assigned a side dish. I cant seem to grab an idea out of my brain. Sides can include a dip and veggies etc. any ideas would be appreciated!!!!!!!!

Deviled Eggs, Pasta Salad, Potato Salad, Scalloped Potatoes (from a box), baked potatoes (kept warm in an insulated chest) with the sides - butter, sour cream, shredded cheese, etc., green beans served in a crock pot.

What about Gaudrey's Noodle Casserole?
It looks so good to me.
Noodle Casserole
8 ounces medium width noodles
2 teaspoons poppy seeds
2 cups grated sharp cheddar cheese
2 cups sour cream
1/2 cup finely crushed crackers
2 tablespoons butter or margarine
Paprika
Preheat oven to 350°̊. Cook noodles as directed on the package. Drain well and add the poppy seeds and cheese. Toss until well mixed. Place half of the mixture in a greased or sprayed baking dish. Add half of the sour cream. Repeat layers. Combine crackers and butter or margarine. Heat and stir in a small skillet until well mixed. Spoon evenly over the casserole. Sprinkle lightly with paprika. Bake until bubbling hot all through and top is browned, about 25 minutes.
I've done it with ham and chicken, and also added some green peas to give it some color. It makes a real good main dish. I'd love to have your review when you make it. I'm taking it to our Senior Luncheon in 2 weeks and will probably add the green peas and some tuna to it for that meal.

Fruit salad is always east to throw together...combine fresh with canned (esp'lly at this time of year)...
fresh melon as a base, grapes & berries for color. Canned mandarin oranges & pineapple...I even added canned grapefruit one time...they were very tasty & I didn't have to buy a 5 lb bag!!

Oriental Slaw
1 package shredded coleslaw cabbage
1 package Oriental flavored Ramen noodles
1 bunch green onions -- chopped
1/2 cup oil
1/2 teaspoon pepper
1 tablespoon sugar
Seasoning packet from noodles
2 tablespoons sesame seeds-optional
1/2 cup sliced almonds
Toast nuts and sesame seeds in a hot pan until golden and allow to cool. Mix coleslaw, onions, and broken-up Ramen noodles together in a medium-sized bowl, and add cooled nuts/seeds. Mix oil, sugar, pepper, and Oriental flavored seasoning packet together and pour over slaw mixture just before serving. Stir well to get mixture evenly coated, and enjoy!!
This is delicious!!!

RANCHO BEANS
2-16 oz. cans of pork and beans
1-16 oz. can of kidney beans, drained
1 lb. ground beef
1 pkg dry onion soup mix
1 cup ketchup
1/2 cup water
2 Tbsp mustard
2 tsp. vinegar
Brown beef and drain. In separate bowl, mix all other ingredients together. Add ground beef and mix well. Put in 9x13 pan and bake for 45 minutes at 400 degrees.
A great take-along and can be doubled or tripled easily.

Always avoid potentially hazardous foods for potlucks. Potentially hazardous foods are foods or groups of foods that support rapid and progressive growth of infectious or toxigenic bacteria. They include any food that consists in whole or in part of milk or milk products, shell eggs, meats, poultry, fish, shellfish, and baked or boiled potatoes.
If you do take a potentially hazardous food, keep anything that should be cold at 40°F or colder and hot foods above 140°F. It's best to make hot foods and take them immediately and keep them hot, rather than make them, cool them, then reheating them.

Black Bean Taco Salad
2 cans (15 oz. each) black beans, rinsed and drained
1 can (2-1/4 oz.) sliced ripe olives, drained
2 medium tomatoes, seeded and chopped (1-1/2 cups)
1/3 c. shredded Cheddar cheese
1/4 c. chopped green onions (3 med.)
1/4 c. chopped fresh cilantro (or parsley)
2 T. lime juice
1 t. ground cumin
1/4 t. pepper
4 c. chopped spinach (6 oz.) or other greens of choice
Mix beans, olives, tomatoes, cheese, onions and cilantro. Mix lime juice, cumin and pepper; toss with bean mixture. Serve on greens.
[Keep cold during serving by placing the serving bowl in a larger bowl that has ice in it.]

Tasty Tortilla Rolls
12 oz cream cheese softened
2 tbs chopped green chilies, fresh or canned
3 tbs finely chopped pecans
3 tbs chopped ripe olives
5 tbs minced green onions
1 clove garlic minced
6 8-inch flour tortillas
In a medium size bowl, combine cream cheese, chilies, nuts, olives, onions,. and garlic. Spread one side of each tortilla with the cream cheese muixture, covering completely. Roll each tortilla up tightly, jelly roll style and wrap individually in plastic wrap. Refrigerate several hours or overnight. To serve cut each long roll into 1/2 inch rounds and place cut size down on serving tray. Use toothpicks to spear rolls for dipping into salsa.
Makes 60 pieces.

Salsa Spread
8 oz cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
1 cup thick and chunky salsa
2 cups shredded cheese
1 green pepper
3 green onions, chopped
1 tomato diced
Mix first 3 ingredients together. Spread ocer 12-inch pizza pan. Add layers of salsa, cheese, green pepper, onions, tomato. Cover and chill until ready to serve. Serve with nacho chips.
This makes a great appetizer and everybody loves this recipe.

Glorified Rice
1 3 ounce pkg lemon jello
1 cup boiling water
1 cup canned pineapple juice
1/2 tsp salt
2 cups cold cooked rice
4 TBS sugar
1 cup heavy cream, whipped
Dissolve jello in boiling water. Add pineapple juice and salt. Chill. When slightly thickened, beat mixture until the consistency of whipped cream. Fold rice into jello. Add sugar to whipped cream and then add whipped cream into jello. Turn into mold. Chill until firm. Serves 8

This sald is light and refreshing and a bit tangy!
Lemon Salad
1 (21 oz) can lemon pie filling
2-11oz cans of madanrin oranges-drained
3/4-1 C. flaked coconut
3 C. mini marshmallows
1 C. sour cream
Mix sour cream and pie filling in a bowl with a spoon till well blended. Add the remaining infredients and mix well.
Chill several hours.
I reserve a few mandarin oranges for garnish and sprinkle lightly with coconut.
