  • Swiss Chard-How do you fix it??
    We have an abundance of swiss chard in our garden, both the Ruby and Regular green kind. I have been cooking it just like I would spinich, with a little bacon or jowl for flavor and just boiled or steamed would welcome any hints for more variety to use it. I think I may pressure can some of it in pints for use this winter but would welcome Tried and True recipes. Thanks

    Red Chard and Caramelized Onions
    This dish is good hot or at room temperature. Prep Time: approx. 10 Minutes. Cook Time:
    approx. 20 Minutes. Ready in: approx. 30 Minutes. Makes 4

    1 large yellow onion, chopped
    2 tablespoons olive oil
    1 teaspoon brown sugar
    1 bunch red Swiss chard,
    rinsed and chopped
    1/4 cup kalamata olives
    2 tablespoons capers
    1/2 teaspoon coarse sea salt,
    or to taste
    freshly ground black pepper
    to taste
    juice of one lemon

    1 In a cast iron skillet, cook onions in olive oil over
    medium-high heat until they begin to brown. Stir in brown sugar,
    and continue cooking for a few minutes.
    2 When onions are brown and tender, stir in chard and
    olives. Cook until chard is slightly wilted. Stir in capers
    and salt, and continue cooking until chard is completely
    wilted, about 3 minutes. Season with black pepper and squeeze
    lemon over the top.

    Baked Cheese Polenta With Swiss Chard

    Recipe can be prepared up to 24 hours in advance.

    2 tablespoons olive oil
    6 garlic cloves, minced
    8 cups chopped swiss chard, stems &, leaves
    cooking spray, for pan
    The Polenta
    1 (14 1/2 ounce) can chicken broth
    1 1/2 cups water
    1/2 teaspoon salt
    1 cup cornmeal or quick cooking polenta
    1 tablespoon butter
    3 tablespoons grated parmesan cheese
    1 cup grated mozzarella cheese
    1/3-1/2 cup sour cream

    6 servings

    1 hour 5 minutes
    30 mins prep

    Thank you very much for the replies, I have copied and plan to try each one I receive because we REALLY will have plenty of it and seems to have lots of vitamins so I want to be sure we use it. I will enjoy fixing it different than just plain boiled with seasoning even tho I like it that way too. Thanks again, Anna
