These cakes are very good dipped in coffee as a breakfast cake or anytime for that matter. Very good!

Apea Cake

4 cups flour
2 cups light brown sugar
3/4 cup lard (shortening, Crisco,)
1 egg
1 level teaspoon vanilla
salt (pinch)
1/2 cup milk

Mix dry ingredients. Rub in lard or Crisco like when making a pie dough. Add milk to beaten egg, moisten dry ingredients. It would be like soft pie dough. Fit in pie plates and bake
350 degrees till nicely browned. About 20 minutes or so till done.

Apea cakes are really good and taste great with coffee or hot tea.
