    Five-Hour Stew

2 pounds chuck roast or beef stew cubes (we used the cubes)
    2 1/2 cups cubed potatoes
2 cups carrots, cut into chunks
    1 cup chopped celery
    2 small onions, chopped
    1 1/2 teaspoons salt
    1 tablespoon sugar
    1 cup V-8 juice
    1 1/2 cups tomato *
    2 teaspoons tapioca

Prepare vegetables, and if you're using chuck roast, cut it into cubes.

Combine all ingredients; place in Crock-Pot. Cook on high* for 6 to 7 hours.

*Adjust for your particular crockpot. The older ones can take longer than 7 hours, the newer ones, less than 6.

This recipe looks great! I'd like to try it but don't understand the 1 1/2 C tomato ---- is that tomato juice, sauce or just tomatoes?

    Thank you for clarifying!

Did anyone ever clarify what the 1 1/2 cups tomato was in this recipe?  Chopped tomatoes, tomato juice?  thanks

I would use tomatoes since you already have the V-8 juice in there and that's the way I make it.  Hope you enjoy!
