Aroma roaster oven-how do I use it?

  • Aroma roaster oven-how do I use it?
    I bought an Aroma Roaster Oven (http://www.aromaco.com/housewares_products_roasterovens.htm) Here's the link for the exact one.
    I have no idea how to use it. I bought it a couple months ago on a shopping trip to Branson for $25!! It's huge. I have a big family, so I was pretty excited. But, when I brought it home, there were no instructions on how to use it. I've cooked a roast in it, and it worked great. But, I also want to use it as a slow cooker, which it says it can do, but no clues how. I want to make black eyed peas and ham in it tomorrow, but am nervous about leaving it alone with my husband while I am gone!
    Does anyone know how to use this thing??

    Here is a link to recipes for a Nesco Roaster Oven. I am guessing but they should work the same way.

    Cajun Red Beans & Rice

    1 pound dry red kidney beans
    4 cups water
    1 teaspoon cayenne pepper
    3/8 teaspoon garlic powder
    1/2 teaspoon onion powder
    1/4 teaspoon marjoram
    1/2 teaspoon paprika
    4 teaspoons chili powder
    1/4 teaspoon oregano
    1/4 teaspoon salt
    1/2 teaspoon pepper
    1-1/2 teaspoons Cajun seasoning


    Combine above ingredients in bowl or pan. Marinate for 8 hours.

    3 cups water
    2 teaspoons Tabasco® sauce
    2 bay leaves
    3 beef boullion cubes
    1 tablespoon Worcestershire® sauce
    1 16-ounce can diced tomatoes with chili peppers
    1/4 teaspoon brown sugar
    Additional water, if needed

    Place all of above in cookwell of a 4 or 6 quart Nesco® Roaster Oven. Simmer at 225º F. for an additional 8 hours. Stir occasionally. Add additional water, if needed, throughout the cooking process to keep level 1" above the beans.

    1 stalk celery, chopped
    1/2 green pepper, chopped
    1 pound German or Polish sausage, cut into small slices
    6 cups white rice, cooked

    Add celery, green pepper and sausage. Cook an additional 1/2 hour at 350º F. Serve over rice.

    Serves 8.

    This traditional Louisiana bayou recipe can be served as a main course or as a side dish. Eight hour marinating time required.

    Baked Beans

    1 pound Great Northern navy beans, dried
    1 pound pinto or brown beans, dried
    1 pound black-eyed peas, dried
    6 cups water, hot
    2 cups dark molasses
    1 cup cider vinegar
    1 cup brown sugar
    1 pound thick-sliced bacon, cut in 1" pieces
    2 large onions, diced
    2 tablespoons mustard
    1 cup ketchup


    Add beans to unheated cookwell. Cover with 4 quarts hot water. Let stand several hours or overnight. Drain.

    Preheat 18 quart Nesco® roaster oven to 300º F. Add remaining ingredients, except ketchup, to beans. Stir in 6 cups hot water. Cover. Bake 2 hours or until beans are tender. Reduce temperature to 250º F. Stir; cover and bake 5 hours. Stir in ketchup. Cover and bake 1 hour.

    To hold: Reduce temperature to 200º F. Add hot water or tomato juice if beans begin to dry.

    Serves 25.
