Old Family Secret Recipe.....What to do with your leftover cornbread...

  • Old Family Secret Recipe.....What to do with your leftover cornbread...
    My mom always called it eggbread....it's so much a good comfort food for me, as I have eat this many a winter night when I was a kid...and it's so easy it's pitiful...It might sound nasty, but it's good! I promise!

    EGGBREAD!

    Put some butter in your skillet and warm it up...while your doing that crumble up your leftover cornbread in it....quickly(you may wanna do this first while butter is melting)scramble up some eggs and pour it over the crumbled cornbread....For half a 10 inch skillet, I use about 6 to 7 eggs...cook to taste, being careful not to let it dry out too much....I kinda like mine just a tiny ,tiny bit wet....

    Sounds weird but I promise ya'll it's good!

    Sounds Good . I crumble in buttermilk for a late evening snack. Guess it's a WV thing..Could be KY, too. :)

    I like to split it, then butter the sides and toast in the oven. It's great with jam. My husband loves cornbread even if it is severals days old. Have you used any of the Little Crow mixes? Their sweet cornbread is great.

    I don't think we have lil crow mixes, but we do have Jiffy mixes here....but my favorite is 3 rivers cornbread....I like to fry it with butter and while it's hot, pour milk over it too.....

    I make fried cornbread. I use White, self rising cornmeal mix, a tiny pinch of baking soda and buttermilk. I make a semi thick batter, heat up a skillet with canola oil (bacon grease is the best), and fry small rounds, covered till bubbles come up and then turn and finish uncovered. This is so good with butter (hot). I save the leftovers in a plastic bag and heat up in the toaster. Yummy. I never bake cornbread anymore, havent' for years.

    Not really a recipe for leftover cornbread unless you have alot left over but still a good recipe.

    DH and I went for supper tonight at the Log House Restaurant just outside of Argos, IN on US 31. We had this salad from the salad bar. I didn't know what it was and asked the waitress. She told me that it was cornbread salad. I told her that I didn't like cornbread but that the salad was very good. She got the recipe for me and I'm sharing it with all of you.

    Jackie's Cornbread Salad
    1 box Jiffy corbread mix Bake as directed. Cool and crumble.
    Cream together
    1 envelope of ranch style salad dressing
    1 C sour cream
    1 C mayonnaise
    In another bowl combine
    1/2 C chopped green pepper
    1/2 C chopped red pepper
    1/2 C chopped onion
    3 lg tomatoes, seeded and chopped
    1-16 oz can pinto beans, drained
    2 C frozen corn
    You will also need
    2 C shredded Cheddar cheese
    10 slices bacon, cooked and crumbled
    In a large bowl layer
    1/2 of the corn bread
    1/2 of the vegetables
    1/2 of the cheese
    1/2 of the dressing
    1/2 of the bacon
    Repeat the layers.
    Cover and refrigerate several hours. Toss lightly just before serving.
