  • Looking for Pumpkin Muffin Recipe
    I am in charge of bringing snacks for my daughters soccer game this week. I thought I wanted to bring some Pumpin muffins. I'm looking for your favorite pumpkin muffin recipe.

    Pumpkin Muffins


    1-1/2 cups all-purpose flour
    1 cup quick cooking rolled oats, uncooked
    3/4 cup firmly packed brown sugar
    2 teaspoons baking powder
    1 1/2 teaspoons pumpkin pie spice
    1/2 teaspoon baking soda
    1/2 teaspoon salt, optional
    1 cup pecan pieces
    1 cup canned pumpkin
    3/4 cup skim milk
    3 tablespoons vegetable oil
    2 egg whites, lightly beaten

    Topping
    1/4 cup quick cooking rolled oats, uncooked
    1 tablespoon firmly packed brown sugar
    1/8 teaspoon pumpkin pie spice

    Preheat the oven to 400-degrees. Prepare the muffin pan with paper liners or
    spray with nonstick cooking spray. In a bowl combine the Topping ingredients and
    mix well. Set the topping ingredients aside. In a large mixing bowl combine the
    dry ingredients for the muffins and mix well. In a separate bowl combine the wet
    ingredients and mix well. Add the wet mixture into the dry mixture and stir
    until just moistened. Fill the muffin cups and sprinkle with the prepared
    topping. Bake for 22 to 24 minutes, until a wooden toothpick inserted in the
    center of a muffin comes out somewhat clean. Cool in pan on a wire rack for 5
    minutes. Remove from the pan and continue to cool. Serve warm or cooled. Yields:
    12 muffins.
    Variation: Use old-fashioned oats if you want the muffins chewier.

    these are the best pumpkin muffins - tried and true I have made them lots of times. this original recipe has choc chips. I omit them and the recipe is soooo good!

    Pumpkin Chip Muffins

    4 eggs
    2 c sugar
    1 can(16 oz) pumpkin
    1 ½ c vegetable oil
    3 c all-purpose flour
    2 tsp baking soda
    2 tsp baking powder
    1 tsp gr cinnamon
    1 tsp salt
    2 c(12oz) semisweet chocolate chips

    In a large mixing bowl, beat eggs, sugar, pumpkin & oil until smooth with electric beaters. Combine flour, baking soda, baking powder, cinnamon & salt; add to pumpkin mixture & mix well. Fold in chocolate chips (if using). Fill paper-lined muffin cups half to 3/4 full. Bake at 400 degrees for 15-18 mins or until muffins test done.

    Pumpkin Muffins

    2 cups sugar

    1/2 cup water
    2 cups bread flour
    1-1/2 teaspoons baking powder
    1 teaspoon baking soda
    1/2 teaspoon cloves
    3/4 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1 teaspoon salt
    1-1/2 cups raisins
    1 cup walnuts

    Place sugar, vegetable oil, eggs, pumpkin and water in bowl and mix. Sift flour, baking powder, baking soda, salt and spices. Add to first mixture and mix. Add raisins and walnuts. Let stand one hour at room temperature. Place in greased muffin pans. Bake in preheated 400-degree oven approximately 15 minutes. Makes 2 dozen.

    Pumpkin Spice Muffins


    1/2 cup pumpkin puree
    1/2 cup milk
    1 egg
    2 cups baking mix (such as Bisquick) + 1 T. additional
    1/4 cup light brown sugar + 2 T. (additional)
    1/2 tsp. nutmeg
    1/2 tsp. ginger
    1 tsp. cinnamon
    1 T. butter
    Preparation -
    Combine pumpkin, milk and eggs in a bowl. Mix together, then set aside. In a separate bowl, combine 2 cups baking mix, 1/4 cup brown sugar, nutmeg, ginger and 3/4 tsp. cinnamon. Add this to the pumpkin mixture and stir. Spoon batter into 12 well greased muffin cups. Top with a combination of 1 T. baking mix, 2 T. brown sugar, 1/4 tsp. cinnamon, and 1 T. butter. Bake at 400° for 15 minutes or until golden brown.


    I have not tried these

    I used homemade bisquick and felt the batter was too thick, so I added 1/4 cup more milk. I also didn't have nutmeg, so I used a generous 1/4 tsp. allspice. These were good, not real sweet though. I would also cut back on the butter in the topping to make it more crumbly. These were tasty and easy.

    Baked the muffins today. They are delicious!! House smells good! I also made the butter to spread on the muffins, although the muffins are very soft and moist, they don't need it.

    Stir together first 9 ingredients. In another bowl mix pumpkin, butter, buttermilk, eggs, molasses and vanilla until blended. Make a well in center of dry ingredients; add pumpkin mixture and stir just to combine. Stir in pecans or cranberries if using. Spoon into lined or sprayed muffin cups. Bake 20-25 minutes or until done.
    Yield: 12 muffins

    4 tbsp butter, softened
    4 tbsp canned pumpkin
    1 tsp brown sugar
    1 tsp cinnamon
    1/8 tsp cloves

    Combine all ingredients and mix well. Cover and store in refrigerator

    Cheese Stuffed Pecan-Pumpkin Muffins

    2 cups flour
    1/2 cup sugar
    1/2 cup chopped pecans
    1 Tbsp. baking powder
    1 1/2 tsp. pumpkin pie spice
    1/2 tsp. salt
    2 eggs, slightly beaten
    3/4 cup pumpkin
    1/2 cup butter, melted
    1/4 cup sour cream
    1 3 oz. pkg. cream cheese (cut into cubes)
    Cinnamon-sugar to taste, opt.


    In large bowl mix flour, sugar, nuts, pumpkin pie spice, baking powder and salt. In small bowl mix eggs, pumpkin, butter and sour cream. Add to flour mixture; stir just unti;l blended. Fill greased pans 1/3 full. Place a cream cheese cube in center of each. add more batter to fill pans 2/3 full.

    For coffeecake, spoon /2 the batter in greased 9" square pan. Place cubes evenly spaced on the batter. Srinkle tops with cinnamon-sugar. Bake in 400° oven for 15 to 25 minutes for muffins and 30 to 35 minutes for coffeecake.
