    A friend at work just lost their 19 year old son in an accident at college. I would love some recipes that I can make and freeze for some of their tough days ahead. Thanks in advance.

    Chicken-Stuffing Casserole
    Yield: 4 small loaf pans; One serving plus leftovers each
    2 cups Diced cooked chicken
    1 package Herb stuffing mix or Stove-Top with seasoning packet
    1/2 cup Butter, melted
    1 cup Celery, chopped
    1 can Cream of mushroom soup
    1 cup Chicken broth
    1 can Cream of chicken soup
    Optional ingredients: Water chestnuts, walnuts or cashews.
    In 8 x 8" casserole dish add melted butter and stuffing mix and stir. Remove and reserve about 1/2 mix for casserole topping. Heat together soups, broth, chicken and celery. Pour over stuffing and then add reserved stuffing mix for topping.
    Heat in 350 oven until browned and bubbly.

    To Freeze:I freeze in mini loaf pans (about 1 1/2 servings each).

    To Serve: Thaw overnight in freezer or remove frozen casserole from loaf pan and place in microwave proof casserole that has been coated with non-stick spray. Thaw on defrost cycle in microwave and then bake at 350 for about 20 minutes--just until hot and bubbly.

    I think lasagna freezes well. I'll post the one I love, but it's time consuming, so if you have a favorite, use that.

    Time consuming, but worth it!

    1/2 pound ground beef
    1/2 pound bulk Italian sausage
    1 large onion, chopped
    3 garlic cloves, minced
    1 can (28 oz) crushed tomatoes, not drained
    1 can (6 oz) tomato paste
    1-1/2 cups water
    1 cup salsa
    2 teaspoons sugar (I omit)
    1 to 2 teaspoons chili powder
    1 tsp fennel seed (I didn’t have, so I omitted)
    1 teaspoon dried oregano
    1 teaspoon dried basil
    9 lasagna noodles
    1 carton (16 oz) cottage cheese
    4 cups (1 lb) shredded mozzarella cheese
    3/4 cup grated Parmesan cheese

    In a large kettle or Dutch oven, cook beef, sausage and onion until meat is brown and onion is tender; drain. Stir in the next 10 ingredients. Simmer uncovered, for 3 hours, stirring occasionally. Meanwhile, cook lasagna noodles according to package directions; drain and rinse in cold water. In a greased 13 x 9 x 2 inch baking dish, layer a third of the noodles and meat sauce, half of the cottage cheese, a third of the mozzarella and a third of the parmesan. Repeat layers. Top with remaining noodles and meat sauce, mozzarella and parmesan. Cover and bake at 350 for 45 minutes; uncover and bake for 20 minutes. Let stand 20 minutes before cutting.
    Serves: 12

    We enjoyed this almost as much after freezing as the fresh. In fact I need to make this again.

    1 package (8 oz.) manicotti shells.
    2 c. cubed cooked chicken
    2 c. (8 oz.) shredded Monterey Jack cheese, divided
    2 cups (8 oz.) shredded mild cheddar cheese
    1 cups. (8 oz.) Sour cream
    1 small onion, finely diced, divided
    1 can (4 oz.) chopped green chilies, divided
    1 can (10-3/4 oz) condensed cream of chicken soup, undiluted
    1 c. salsa
    2/3 c. milk

    Cook manicotti according to package directions. Meanwhile, in a large bowl, combine the chicken, 1-1/2 c. Monterey Jack cheese, 1-1/2 c. cheddar cheese, sour cream, half of the onion and 6 tbsp green chilies. In another bowl, combine the soup, salsa, milk, and remaining onion and chilies. Spread 1/2 c. in a greased 13x9x2” baking dish. Drain manicotti; stuff each with about 1/4 cup chicken mixture. Arrange over sauce in baking dish. Pour remaining sauce over shells.
    Cover and bake at 350 for 30 minutes. Uncover; sprinkle with remaining cheeses.
    Bake 10 minutes longer or until cheese is melted.
    This is great re-heated and ok to freeze

    Comments: Mary really likes this. It's good to make this ahead of time and put in the fridge. Just allow a little extra time for cooking. Be sure to let it set after cooking.

    1 cup onion, chopped
    1 cup green pepper, chopped
    2 t. minced garlic
    1 lb. ground beef
    1 (16 0z.) diced tomatoes, with liquid
    1 (8 0z.) mushroom, drained & diced
    1 teaspoon oregano
    16 oz. spaghetti cooked & drained
    2 cup shredded mild cheddar cheese
    1/4 cup water
    1 can (10.5 oz.) cream of mushroom soup
    1/4 cup grated parmesan cheese

    In large skillet sauté first 4 ing. Add tomatoes, mushrooms & oregano.
    Simmer uncovered for 10 min.
    Place half of the spaghetti in greased cake pan (9x13”) .
    Top with half of meat mixture
    Sprinkle 1 cup cheese.
    Mix soup & water until smooth, pour over casserole.
    Sprinkle with parmesan cheese
    Bake uncovered 350 30 - 35 min
    Let set 10 min.

    Comments: I like to make this up ahead of time to where all I have to do it throw it in the oven. Nice for when we have company.

    1-1/2 lb. ground beef
    Salt & pepper
    1 onion, diced
    1 green peppers, diced
    1 pkg. (8 oz.) noodles
    1 can yellow cream style corn
    1 can cream mushroom soup
    1 cup sour cream
    2 cup grated mild cheddar cheese

    Brown meat, onion, & peppers in skillet. Cook noodles til done. Add all to meat. Mix. Put in 9x13" baking dish that has been sprayed with a non-stick cooking spray. Cover with grated cheese
    Bake 350 30 - 40 min.

    Comments: The name says it all. This casserole is fantastic.

    2 lb. ground beef
    2 t. minced garlic
    1/2 t. salt
    28 oz. tomato sauce
    1 can (4 oz.) diced green chilies, optional
    8 oz. cream cheese, softened
    1 pt. sour cream
    1 c. chopped onions
    12 oz.. egg noodles
    3 c. shredded mozzarella cheese

    Brown ground beef til done. Then add garlic, salt, green chilies and tomato sauce. Simmer for 30 minutes. While that simmers, mix together cream cheese, sour cream and onions.
    Cook noodles.

    In a pan 9x13" that has been sprayed with a non-stick cooking spray,
    Layer: 1/3 of sauce, 1/2 noodles, 1/2 cream cheese mixture, 1/2 mozzarella cheese, cover with 1/3 more sauce, remaining noodles, cream cheese, mozzarella cheese and sauce
    Bake at 350, uncovered for 30 minutes.
    Remove from oven, cover and let sit 10 min. before serving.

    Comments: This is so good. Have a little rice on the salad and you’ll have a wonderful meal

    1 (16 oz.) package tortilla chips (crushed)
    2 lbs. ground beef (browned & greased drained off)
    salt & pepper
    1 (10.5 oz.) can cream of mushroom soup
    1 (10.5 oz.) can cream of chicken soup
    1 (12 oz.) can evaporated milk
    1 (10 oz.) can enchilada sauce
    1 (4 0z.) can green chiles
    2 cup grated mild cheddar cheese

    Brown ground beef until done.
    Put chips in large greased casserole dish
    Top with ground beef
    Mix remaining ing., except cheese.
    Pour over ground beef
    Top with cheese
    Bake 350 20 - 25 min.

    Comments: This is one of Sam’s favorite casseroles. Sam calls this pastachilli.

    1 lb. ground beef
    1 (1 lb. 11.7 oz) jar Ragu sauce (or your favorite spaghetti sauce)
    1 (16 0z.) package rotini, cooked
    2 c. mozzarella cheese, shredded

    Brown beef until done. Add sauce
    Add noodles,
    Layer meat & cheese. Layer twice
    Bake 350 25 min.

    Comments: The basic recipe came from Sharon. I changed it just a bit so I wouldn’t have to pre-cook the shells. Here is what I ended up with. This heats up wonderfully in the microwave.

    2 lbs. Lean ground beef
    2 envelopes taco seasoning
    1 pkg. (8 oz.) cream cheese
    1 pkg. (12 oz.) jumbo shells, uncooked
    1 c. picante sauce
    2 (8 oz.) jar taco sauce
    1 (10 oz.) can diced tomatoes with green chilies
    2 c. (8 oz.) shredded pizza cheese (mozzarella, cheddar blend)
    1 1/2 c. crushed tortilla chips
    1 c. (8 oz.) sour cream
    chives, optional
    parsley flakes, optional

    In a skillet brown beef, drain. Add taco seasoning—prepare according to pkg. directions.
    Add cream cheese, cover and simmer 5-10 minutes or until melted.
    Put in bowl, cover, chill one hour in refrigerator.
    Spray a 9x13” baking pan with a non-stick cooking spray.
    Place Salsa in the bottom of the pan.
    Stuff UNCOOKED jumbo shells with meat mixture. Lay on top on salsa.
    Then mix taco sauce and diced tomatoes with green chilies. Cover shells, making sure to cover each shell. Cover pan and place in refrigerator overnight.
    Set out about 15 minutes before baking.
    Preheat oven to 350.
    Place casserole, covered, in oven for 35 minutes.
    Uncover and sprinkle with cheese and then tortilla chips.
    Put back in oven for 15 minutes.
    Let set about 10 minutes before serving.
    Serve with sour cream, chives and parsley flakes.

    Comments: Do ahead & let set all day or overnight.
    To help lower fat content: use Velveeta light cheese

    1 chicken, cooked, deboned & cut-up
    1 pkg. ( 10.5 oz.) fritos
    2 cans (10 oz.) mild enchilada sauce
    1 can (14.5 oz.) chicken broth
    2 cup grated. Velveeta cheese
    1 can diced (4 oz. each) green chilies
    1 cup shredded mild cheddar cheese

    In pan combine enchilada sauce, chicken broth, green chilies & Velveeta cheese.
    Heat until cheese has melted, set aside
    In baking dish, put half of fritos
    Top with half of the chicken.
    Then put on remaining fritos
    Top with remaining chicken
    Then pour enchilada sauce mixture over this.
    Top with cheddar cheese.
    Bake 350 20 - 30 min.

    It is really good if you do this ahead of time & let sit all day or overnight. If you do this, don't add cheddar cheese until end of cooking time. Allow a little more time to cook also.

    Comments: To make this as low fat as possible, on your soups use fat-free & use low-fat cheese.

    1 (10 oz.) pkg. lasagna noodles

    4 egg whites, lightly beaten
    24 oz. fat-free cottage cheese
    1 T. chopped parsley, dried
    1 (4 oz.) canned diced green chili peppers

    1 c. chopped onions
    1 t. minced garlic
    2 (10 3/4 oz.) cans condensed tomato soup
    1 (10 oz.) can enchilada sauce
    1 (4 oz.) can diced green chili peppers
    1 T. chili powder
    1 t. ground cumin, optional
    1/2 t. ground black pepper
    4 c. cooked chicken breasts, torn into bite-size pieces (can use a whole chicken cut-up, cooked & deboned if you'd like)
    3 c. (12 oz.) Colby & Monterey Jack cheese mix

    NOODLES: Cook the noodles according to the directions on the pkg. Drain & set aside.

    While noodles are cooking, stir together the egg whites, cottage cheese, parsley & diced chilies. Set aside

    Lightly spray an unheated saucepan with no-stick spray. Add the onion, & garlic. Cook & stir over med. heat until tender.
    Stir in the soup, enchilada sauce, green chilies, chili powder, cumin, & black pepper.
    Bring to a boil, then reduce the heat.
    Simmer, uncovered, for 10 min., stirring often
    Preheat oven to 375
    Lightly spray a 13" x 9" x 2" baking pan with no-stick spray.
    To assemble the lasagna, place four of the noodles in the pan.
    Spread half of the cottage cheese mixture over the noodles.
    Top with half of the sauce mixtures, & half of the chicken.
    Then top with half of the cheese
    Repeat layers with the remaining noodles, cottage cheese mixture, sauce mixture, chicken, & cheese.
    Cover with foil or lid
    Bake about 50 min or until bubbly.
    Let stand 15 min. (this is IMPORTANT) before cutting

    Comments: This is one of Dustin's favorite casseroles

    2 cup small macaroni
    2 cup diced cooked chicken
    2 cup shredded mild cheddar cheese
    1 can cream of chicken soup
    1 cup milk
    1 large can diced mushrooms

    Cook macaroni about 6 min. drain.
    Mix in all ing.
    Bake uncovered in a 9x13” pan that has been sprayed with Pam.
    350 - 50 - 60 min.
