    Hi, my DD fell in love with the CHeesecake Factories dish, spicy chicken chipotle pasta, the menu reads honey glazed chicken, asparagus red and yellow peppers frozen peas garlic onions in a spicy chipotle sauce...they give you such a big serving so she was able to bring a lot home and we have been trying to guess the sauce, it was not creamy like alfredo nor was it tomato based, any ideas? Shirley

    Still looking, but this is on the idea... Manchego is like parmesan...

    REC: Chicken and Penne in Chipotle Cream Sauce
    Chicken and Penne in Chipotle Cream Sauce

    This dish is spicy and flavorful. Make it as
    hot as you like and serve with a light salad
    (no cheese!) and garlic bread. It has become
    the house favorite here. Enjoy!

    1 (10 oz.) can evaporated milk (or 1 cup
    heavy cream for the full fat version)
    2 tablespoons vegetable oil, divided
    1 tablespoon butter
    2 chicken breasts, cut into ½-inch pieces
    4 garlic cloves, minced
    ½ small onion, minced
    2 tablespoons tomato paste
    2-4 tablespoons chopped chipotle peppers in
    adobo sauce
    1/4 teaspoon (or more!) cayenne pepper
    3 to 4 shakes crushed red pepper, optional
    1 teaspoon salt
    ¼ teaspoon pepper
    1 cup grated Manchego cheese, packed
    ½ pound penne pasta, cooked and drained
    2 green onions, thinly sliced

    Heat milk (or cream) on medium heat to a
    simmer. In the meantime, heat 1 tablespoon
    of the oil on med-high heat and sauté ½ of
    the chicken breasts until cooked through and
    lightly browned. Remove chicken to a plate
    and without adding more oil repeat with the
    rest of the chicken. Remove to a plate and
    set aside. In the same skillet heat 1
    tablespoon of butter and the remaining 1
    tablespoon of oil on medium heat and
    immediately add the garlic and onion. Do not
    let the garlic brown! This should take about
    5 minutes. When the onions are translucent
    add the chicken back to the skillet and set
    aside.

    When the milk has come to a gentle simmer
    add the tomato paste, chipotle peppers,
    cayenne pepper, crushed red pepper, salt and
    pepper. Stir to blend. Add the Manchego
    cheese and stir until melted. Taste for
    seasoning. Add chicken to the sauce and as
    soon as sauce is heated through serve over
    the penne. Pass extra grated Manchego cheese
    and top each serving with a sprinkling of
    green onions.

    Serves 4

    Hi Jolene, thank you for answering so quickly, I think if we add the peppers and peas and asparagus it just might be it....I usually don't like peas in dishes but these were frozen and stayed firm...thanks again for all your help....Shirley
