Recipe: Pumpkin Cake..Very Easy, Made-from-Scratch Cake

  • Recipe: Pumpkin Cake..Very Easy, Made-from-Scratch Cake
    This was one of the easiest cakes I've ever made and it tastes good, too :) The frosting was also very good with an excellent texture. I might add 1 teaspoon of vanilla to the cake ingredients next time, though. Just seems like vanilla adds such a nice "something" to a cake. Here is the recipe:

    Pumpkin Cake
    1 cup vegetable oil
    2 cups sugar
    4 large eggs
    1 15-ounce can pumpkin
    1 teaspoon vanilla
    2 cups self-rising flour
    1 tablespoon cinnamon
    ____________________________
    Preheat oven to 350ºF. Grease and flour a tube pan.
    With an electric mixer, combine oil and sugar until well blended. Add in eggs and pumpkin and beat until creamy. In a small bowl combine flour and cinnamon. Gradually add to cream mixture and beat on medium speed for about 2 minutes. Pour into prepared pan and bake for 1 hour. Let set on cooling rack for 10 minutes and then turn out onto cake plate. Cool completely. Frost with Cream Cheese Frosting (recipe follows).

    Cream Cheese Frosting
    1 cup butter, softened
    6 ounces cream cheese, softened
    2 teaspoons vanilla
    16 ounces confectioner's sugar (1 box)
    Cream together butter and cream cheese with an electric mixer. Add vanilla and sugar and beat on high speed until lighter in color and very smooth and creamy.

    Yummmmm! I've just added this to my list of deserts for our Thanksgiving dinner! I can't eat things with sugar in it, so I plan to try making one next weekend using Splenda. You said it is made in a tube pan....is that like an angle food cake pan? Also, is it the type of cake that would do well in a bundt pan?

    Yes, the pan I used is the kind you would use make Angel Food Cake but I think this would do great in a Bundt pan. Enjoy and let us know how it works with the Splenda.
