I LOVE LOVE LOVE Butterscotch Krimpets from Tastycake. Could eat them by the caseload. They're good at room temperature...they're good straight from the freezer...I am cukoo about them. I could become addicted if not careful. Good thing I can't find them very often out here.

This started out as a TSR recipe, but I fixed it up because it didn't exactly taste like the real thing. I think my version is pretty dang close!

    Butterscotch Krimpets
Why exactly 100 morsels? Because, after several tries, that was exactly the right amount.
    4 egg whites
1 (16-ounce) box pound cake mix
    2/3 cup water
    Icing
100 butterscotch morsels (yes, count them)
6 tablespoons butter, at room temperature
    1 cup powdered sugar

Heat oven to 325 degrees. Spray a 9-inch by 13-inch baking pan with non-stick spray and set aside.

In the bowl of an electric mixer, beat the egg whites until thick. Blend in cake mix and water. Pour batter into prepared pan and level the top. Bake for 30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean. Remove from oven and cool. The cake will be relatively flat.

While cake is cooling, melt the butterscotch morsels in a microwave oven on high for 45 seconds. Watch carefully because the morsels will keep their shape although they will be melted. Stir them with a spoon to make sure they are melted and smooth. If they need additional microwaving, do it in small increments, 4-5 seconds at a time.

In the bowl of an electric mixer, beat the butter and the melted butterscotch. Add the powdered sugar and beat until the frosting is smooth.

Spread frosting on top of the cooled cake. Cut the cake into 7 lengthwise rows. Then make 2 crosswise cuts. This will divide the cake into 21 equal pieces, roughly the size of an original Tastykake Butterscotch Krimpet.

These sound delicious. I also am a big fan of butterscotch krimpets. I can't wait to try them, but have to get a pound cake mix first.

    Goldybear,
The Tastycake company is in Pennsylvania, and they are beloved back there. They will ship, but I don't need a CASE of them, and by the time you pay shipping, you've got a serious chunk of change invested in dessert!

Their Web site says they sell in So Calif. but I have only seen them very sporadically, and not the varieties I favor. They make little snack cakes in many varieties, and I just think their Krimpets are to die for.

This might be a silly question, but how many morsels are in a bag? Will I need to get 2 bags or is 1 enough? These sound really good and easy.

    Thanks

    Prairiegirl,
There are 8 trillion morsels (give or take a few) in a bag. You only need a portion of a bag for this recipe. I really did try that icing component many times to get it right, using less, using more, trying to get it the correct thickness and correct flavor. Finally I hit on the right amount, and I simply counted them out because if I recall, it was "between" 2 amounts, like between 1/4 and 1/3 cup, or something like that. I worked on this recipe a year ago, so I don't recall exactly.

Give it a whirl and tell me what you think.

I was born and raised in the Philadelphia area and that is one of the few things I miss about that area...Tastycakes!  A co-worker and I used to go halves with ordering a case now and then of our favorites...she had lived there, too. I still have one box of the chocolate cupcakes in the freezer. I love the ones with the peanut butter under the top layer...can't remember what those are called.

    Thanks for posting the recipe.
