What Kind Of Goodies Will You Be Making Over the Holiday Season
If time and money lets me, here is what I'd like to make and share. Be sure and post your recipes along with what your going to make.
BANANA PEANUT BUTTER BREAD
Makes: 3 loaves

Comments: the mini loaf makes great homemade Christmas presents. One year I made these to sell at a craft show. Everything else was selling well, but not these. People would look at the name and then pass by it. So I went down to the kitchen and got a knife. Cut up a few for samples. They sold really quick after that.
Ingredients:
4 large bananas mashed
1 cup crunchy peanut butter
2 cups sugar
1 cup butter, softened
4 eggs, well beaten
4 cups flour
4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
Instructions:
Mix together mashed bananas and peanut butter. Sit aside.
Mix flour, baking powder, baking soda and salt . Sit aside
Cream together sugar and butter. Add eggs.
Mix half flour mixture in sugar mixture. Then add half banana mixture, then remaining flour mixture, and then rest of banana mixture. Pour into greased loaf pans
Bake 350
Reg. loaf - 50 - 60 min.
Mini loaf - 25 - 30 min.
Cool 10 min. Take out of pan

MISSISSIPPI SPICE MUFFINS
Makes: 84
Effort: average
Comments: When this is cooking, it makes your whole house smell so good. This is one of Jim’s favorite.
Ingredients:
1 cup butter flavored crisco
2 cups sugar
2 eggs
2 cups unsweetened applesauce
3 teaspoon cinnamon
2 teaspoon allspice
1 teaspoon cloves
1 teaspoon salt
2 teaspoon baking soda
4 cup flour
powder sugar
Instructions:
Cream butter flavored crisco & sugar; add eggs one at a time.
Mix in applesauce & spices
Stir in dry ing. , mix well.
Bake 350 8 - 10 min. in greased mini muffin pan. Let sit 5 min., then take out of pan
Sprinkle with powder sugar
Freezes well.

PINEAPPLE BANANA BREAD
Makes: 2 regular size loafs or 6 mini loafs

Effort: easy
Comments: The basic recipe came from Elaine. I did add a little more pineapple than what her recipe called for. This is wonderful moist bread. Great for sharing.
INGREDIENTS:
3 c. flour
2 c. sugar
1 t. salt
1 t. baking soda
1 t. ground cinnamon
3 eggs
1 1/4 c. oil (I used canola oil)
2 t. vanilla
1 can (15.25 oz.) crushed pineapple, drained
2 c. ripe mashed bananas
INSTRUCTIONS:
Combine flour, sugar, salt, baking soda & cinnamon. Set aside.
In another mixing bowl, beat eggs and oil together. Stir in vanilla; add pineapple and bananas. Then slowly add the dry ingredients, mixing until moistened. Pour batter into 2 greased loaf pans (or 6 greased mini loaf pans). (I used a non-stick cooking spray)
Bake at 350º for 55-60 minutes for regular loafs.
Mini loafs bake for 40-45 minutes or until a toothpick inserted in the middle comes out clean.
Cool 10 minutes in pans. Remove and cool completely.

PECAN MINI KISSES CUPS
Serves: 54
Source: "Homemakers School” Spring 1998 pg. 60
Effort: average
Comments: People are usually really surprised at the chocolate in these.
Ingredients:
1-1/2 c. butter or margarine, softened (I used real butter)
3 pkgs. (3 oz. each) cream cheese, softened
3 c. flour
3 eggs
2 c. packed light brown sugar
3 T. melted butter
3 t. vanilla
dash salt
1 pkg. (10 oz.) Hershey's mini kisses baking pieces.
1-1/2 c. finely chopped pecans
Instructions:
In a medium bowl, beat softened butter & cream cheese until blended.
Add flour; beat well.
Cover, refrigerate at least 1 hr. or until firm enough to handle.
In a small bowl, stir together egg, brown sugar, melted butter, vanilla & salt until well blended.
Shape chilled dough into 1" balls (I got 54 balls); press balls onto bottom & up sides of ungreased mini muffin cups (1 3/4" diameter).
Place 2 mini kisses in each cup.
Spoon about 1 teaspoon pecans over mini kisses.
Fill each cup with egg mixture. (I used a cookie dough scoop & it worked great)
Bake 325 25 min. or until filling is set.
Lightly press 1 baking piece in center of each cookie.
Cool in pan on wire rack
Remove from pan.

PECAN PIE MINI MUFFINS
Serves: 40
Source: "Country Woman" Nov./Dec. 97 pg. 29
Effort: easy
Comments: You can also press a maraschino cherry in the middle of these before baking. Just for something a little different.
Ingredients:
2 c. packed brown sugar
1 c. flour
2 c. finely chopped pecans
1-1/3 c. butter, melted (no substitutes)
4 eggs
Instructions:
In a bowl, combine, brown sugar, flour & pecans; set aside.
Combine butter & eggs; mix well.
Stir into flour mixture just until moistened.
Fill greased & floured or paper-lined miniature muffin cups 2/3 full.
Bake at 350 for 15-18 min. or until muffins test done.
Remove immediately to cool on wire racks.
I got 3 1/2 - 4 dz.

STRAWBERRY BANANA BREAD & MUFFINS

Comments: This recipe was made up by LaDonna These freeze well. Really good with cream cheese spread on them also. Great to give as gifts.
Ingredients:
4 cups flour
1 teaspoon salt
2 cups sugar
1 teaspoon baking soda
1 tablespoon cinnamon
4 eggs, beaten
1-1/2 c. oil
1 (1 lb.) pkg. of whole unsweeted strawberries (mash with potato masher)
1-1/2 cup mashed bananas (mash with potato masher)
Instructions:
Mix dry ing. & makes a well in the center. Pour mixture of remaining ing. into well & mix until dry ing. are moistened
Pour into loaf pans sprayed with a non-stick cooking spray. or muffin tins lined with paper muffin cups. Spray the inside of the paper muffin cups with a non-stick cooking spray.
Bake 350
Regular size loaf: 40-50 minutes
Mini loafs: 30 minutes
Muffins: 25 minutes
Or until a toothpick inserted into the middle comes out clean.
Makes 4 regular loaves or
8 mini loaves or
36 muffins
Let cool 10 minutes then put on wire racks.

ALMOND BRICKLE SANDIES
Serves: 60
Effort: average
Comments: These are kind of expensive to make, but they are very good.
INGREDIENTS:
1 c. butter (no substitutes), softened
1 c. sugar
1 c. powder sugar
1 c. vegetable oil
2 eggs
1 t. vanilla extract
3-1/2 c. flour
1 c. whole wheat flour
1 t. baking soda
1 t. cream of tartar
1 t. salt
2 c. chopped almonds
1 pkg. (7.5 oz.) heath almond Brickle chips
Additional sugar
INSTRUCTIONS:
In a mixing bowl, cream butter & sugars.
Add oil, eggs & extract; mix well.
Combine flours, baking soda, cream of tartar and salt; gradually add to creamed mixture.
Stir in almonds & almond brickle chips.
Shape into 1" balls; roll in sugar.
Place on lightly greased (I used Pam) cookie sheets & flatted with a fork.
Bake at 350 for 12 - 15 min. or until lightly browned.
I got 5 dz. cookies.

CHOCOLATE COVERED PEANUT BUTTER ROUND

Comments: I like to add a big spoonful of creamy peanut butter in melted chocolate
Ingredients:
24 oz. sathers chocolate bark
1 package Ritz mini peanut butter crackers
Instructions:
Melt chocolate bark in microwave according to package instructions.
Dip crackers one by one in chocolate. Put on wax paper to let harden.

DARLA'S ORANGE SLICE COOKIES
Serves: 24
Effort: average
Comments: Kitchen scissors dips in flour helps with the cutting of the orange slices.
Ingredients:
1-1/2 cup brown sugar
1/2 cup shortening
2 eggs
2 cup flour (use 1/2 cup to mix with orange slices)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup coconut
1/2 cup chopped nuts
1/2 cup oats
1 lb. orange slices (cut into pieces and tossed with flour)
Instructions:
Cream sugar & shortening until lightly & fluffy
Beat in eggs
Sift flour, soda, baking powder & blend into creamed mixture
Fold in candy coconuts, nuts, & oats, mixing well
Roll into balls about 1" in diameter
Place on greased cookie sheet & press down with times of dinner fork
Bake 325 12 min. or until lightly brown

CRANBERRY OATMEAL COOKIES
Serves: 48

Comments: The crainsin really gives these cookies a special taste.
Ingredients:
1 c. butter flavored Crisco
1 1/2 c. sugar
2 eggs
1 t. vanilla extract
2 c. flour
1 t. baking powder
1/2 t. salt
1/4 t. baking soda
2 c. quick-cooking oats
1 pkgs. (6 oz.) ocean spray craisins
1 T. grated orange peel
1 pkgs. (12 oz.) vanilla chips
Instructions:
In a mixing bowl, cream shortening and sugar. Add the eggs, one at time, beating well after each addition. Beat in vanilla. Combine flour, baking powder, salt and baking soda; add to the creamed mixture. Stir in oats, craisins, and orange peel. Stir in vanilla chips.
Drop by rounded teaspoonfuls 2" apart onto greased baking sheet.
Bake at 375 for 10 min. or until the edges are lightly browned.
Cool on wire racks
I got around 4 dz.

MINCEMEAT COOKIES
Serves: 36
Effort: easy
Comments: Dad really liked these cookies
Ingredients:
1/4 c. butter flavored Crisco
3/4 c. packed brown sugar
2 eggs
3/4 c. mincemeat
1-1/2 c. flour
1-1/2 t. baking soda
1/2 t. ground cinnamon
1/4 t. ground nutmeg
1/4 t. salt
1-1/2 c. (9 oz.) mini semi-sweet chocolate chips
1/2 c. chopped pecans, optional
Instructions:
In a mixing bowl, cream the shortening & brown sugar.
Add eggs & mincemeat; mix well
Combine flour, baking soda, cinnamon, nutmeg & salt; add to the creamed mixture & mix well.
Fold in chocolate chips & pecans
Drop by tablespoonful 2: apart onto greased baking sheets
Bake at 350 12 min. or until golden brown
Cool on wire rack.
1 got 3 dz.

WHITE CHOCOLATE MACADAMIA NUT COOKIES
Makes approx.: 4-5 dz.

Comments: If you want a special treat. These are the cookies to make.
INGREDIENTS:
1 c. butter flavored Crisco
1 c. light brown sugar, packed
1/2 c. sugar
2 large eggs
2 t. vanilla
2 1/4 c. all purpose flour
1 t. baking soda
1/2 t. salt
1 (12 oz.) pkg. white chocolate chips
1 (2 oz.) pkg. macadamia nuts, chopped
INSTRUCTIONS:
Preheat oven to 375º.
In a large mixing bowl cream together the butter flavored Crisco and both sugars until light and fluffy. Beat in the eggs and vanilla. Gently stir in the flour, baking soda and salt, just until combined. Fold in the white chocolate chips and macadamia nuts.
Drop cookies by rounded tablespoonfuls onto a non-stick cookie sheet) or lined with parchment paper) about 1” apart.
Bake for 9-12 minutes or until lightly golden.
Transfer cookies to a wire rack and cool completely.
Store in airtight container.

CINNAMON HOT CHOCOLATE MIX
Effort: easy
Comments: I really like the little hint of cinnamon in this.
Ingredients:
1-3/4 c. instant nonfat dry milk powder
1 c. powder sugar
1/2 c. non-dairy creamer
1/2 c. baking cocoa
1/2 tsp. ground cinnamon
1 c. miniature marshmallows
Instructions:
In a bowl, combine the first 5 ingredients. Add the marshmallows; mix well. Store in an airtight container in a cool dry place for up to 3 months.
TO PREPARE HOT CHOCOLATE:
Dissolve about 3 T. mix in hot water

Comments: This makes a little over 3 qts.
Ingredients:
1 8 qt. box (10 cup) nonfat dry milk
3 cups Nestle’s quick
1-3/4 cup creamer
Instructions:
Run dry milk through blender and pour into large bowl.
Mix all ing. well
Put in air tight container
Makes a little over 3 qt.
1/3 cup mix to 3/4 cup hot water

RUSSIAN SPICE TEA

Comments: This makes about 3 qts. When you feel a cold coming on, if you will drink on this tea, it really helps. Personal Note Below
Ingredients:
8 oz. tang
3/4 cup instant tea
4 cup sugar
1 teaspoon cinnamon, heaping
Instructions:
Mix well
4 heaping teaspoon to 1 mug of hot water
PERSONAL NOTE: I’ve quit mixing in the sugar with my mixture. Then I can add artificial sugar to it if I want to or regular.
