Recipe for Slow Cooker Enchilades

  • Recipe for Slow Cooker Enchilades
    Hi everyone,
    I'm new to the BB. I have a request. Several years ago my husband used a recipe for slow cooker enchilades which he found in the Taste of Home. Now we can't find it, and he wants to make it. Since he hasn't cooked since I retired, this is exciting to me. I want him to start again! Does anyone happen to have that, or a similar, recipe?

    Here's 2 I just copied & pasted from earlier posts. If you type crockpot enchiladas up in the search box on the left you will get any posts pertaining to them, that is how I found these for you. Hope it is what you are looking for! Kelly

    Crockpot Enchiladas
    1 lb. ground beef
    1 c. chopped onion
    Cook until beef is browned and drain. Add:
    2 cans black beans, drain & rinse
    1 can diced tomatoes, undrained
    1/3 c. water
    1 tsp chili powder
    1/2 tsp ground cumin
    1/2 tsp. salt
    1/4 tsp. pepper
    Bring this to boil with beef & onions, reduce heat, cover and simmer 10 minutes.
    12 corn tortillas
    2 c. shredded sharp cheddar cheese
    Place 4 tortillas in bottom of crockpot, spoon some beef mixture over, then some cheese. Repeat. Cover and cook on low 3 to 5 hours.

    CROCKPOT ENCHILADAS

    1-1/2 lb. ground beef
    1 medium onion, chopped
    1-2 cloves of garlic, minced
    1/2 tsp. salt
    1/2 tsp. pepper
    6 corn tortillas
    2 C. fresh or frozen corn
    1 19-oz can enchilada sauce
    2 C. (8 oz) shredded cheddar cheese
    1 2-1/2 oz. can sliced ripe olives
    1 C. sour cream

    Brown ground beef and drain. Add onion and garlic; cook over medium heat until tender and transparent. Add salt and pepper. Place 2 tortillas in bottom of crockpot. Place a third of the following in layers over the tortillas: meat, corn, sauce, cheese and olives. Repeat tortillas and other layers two times. Cover and cook on low 6-8 hours Serve with sour cream.

    1 can (16 ozs) pinto beans, rinsed and
    drained
    1 can (15 ozs) black beans, rinsed and
    drained
    1 can (10 ozs) diced tomatoes & green
    chilies, undrained
    1/3 cup water
    1 tsp. chili powder
    1/2 tsp. ground cumin
    1/2 tsp. salt
    1/4 tsp. pepper
    1 cup (4 ozs) shredded sharp cheddar
    cheese
    1 cup (4 ozs) shredded Monterey Jack
    cheese
    6 flour tortillas (6 or 7 inches)

    In a skillet, cook beef, onion and green pepper until beefis browned and vegetables are tender; drain.

    Add the next 8 ingredients; bring to a boil. Reduce heat; cover and simmer for 10 minutes.

    Combine cheeses.

    In a 5-qt. slow cooker, layer about 3/4 cup beef mixture, one tortilla and about 1/3 cup cheese. Repeat layers. Cover and cook on low for 5-7 hours or until heated through.

    YIELD: 4 servings
