  • Corn Casserole with Cream Cheese???
Does anyone have a T&T recipe for a corn casserole that has cream cheese and butter in it?
DGS had some yesterday at a party and has requested it for Christmas dinner and I've never made corn that way.
A good recipe would be much appreciated!!
    Thanks, Marge

    Serves: 6
    Effort: easy
Comments: if you like things a little spicier add a few finely diced up jalepno’s

2 cans shoe peg corn or sweet corn
    8 oz. pkg. cream cheese
    1/3 cup milk
    2 tablespoon margarine
    1 jar pimento, optional
    1 can chopped green chilies

    Drain corn
Heat milk, margarine & cream cheese
    Fold into corn
    Add green chilies
    Salt & pepper to taste
    Add pimento
    Cook 350 20 - 30 min.

I also do this in the microwave. It does great.

    Thanks LaDonna!
Do you think I could omit the pimento and chopped green chilies, or would that be to plain? Is it real spicy with the chilies in it?
    Thanks, Marge
  • RE: Corn Casserole with Cream Cheese???
It would be pretty plain. I omit the pimento all the time. I would add the green chilies. We don't think it's to spicy, but if you think it might be, just put maybe half a can of green chilies. Just something to give it some color.

If you don't care of green chilies, you could saute some finely diced green peppers that have been lightly sauted to it.

Marge, I have this recipe, not really a casserole, but very delicious.

    2-3 pounds of frozen corn
8 oz pkg. cream cheese cubed
1/2 cup butter or margarine melted
    2-3 TBS sugar or honey
    2-3 TBS water (optional)

Combine all ingredients in slow cooker.Cover. Cook on low setting 4 hours. Tastes like buttered corn on the cob.

    3 tablespoons milk
    2 tablespoons sugar

This is another one I make. Trish

    Bacon Cheese Corn

    (2) Slices Bacon, Fried, Drained and Crumbled
    (1) TBL Bacon Drippings
    (2) TBL Onion, Chopped
    (1) 20 Ounce Package Frozen Corn
    (3) TBL Milk
    (---) Freshly Ground Black Pepper
    (1) 8 Ounce Package Cream Cheese, Cubed

In a large skillet, fry the bacon. Remove the bacon, reserving 1 TBL of the bacon drippings in a saucepan. Drain bacon and set aside. Sauté the onion in the drippings. Add the corn, milk and pepper to the saucepan. Bring just to a boil. Reduce heat. Cover and simmer for 5-7 minutes or until the corn is crisp-tender. Add the cream cheese to the undrained corn mixture in the saucepan. Stir over low heat until melted. If necessary, add more milk to make the corn mixture of desired consistency. Sprinkle with the reserved bacon. Serve immediately. Makes 4 Servings.

    Thank you all so much.
I really like all the crock pot recipes. That will free up the oven for other things.
You all are so helpful and my DGS will love the corn this year.
    Merry Christmas to all!!!

Made this yesterday for dinner...YUMMY!! Boy did we enjoy it! Of course I tweaked it a bit by adding pepper jack cheese instead of the cheddar, very good will make this again!

Thanks Briamom for bringing it to my attention, and Nancy_NJ for finding it for me!
