I purchased some "Cream of Shrimp" Soup (similar to Cream of Chicken) because I'd never seen it before, it looked good at the time, but now I have no idea what to make with it.
    Got any ideas?

I made Patriciarose's Grown-Up Tuna Noodle Casserole tonight. It was delicious! I loved it. Except for the cream of shrimp soup (which I found at Wal-Mart), I had all the ingredients on hand.

    Grown-Up Tuna Casserole

    (1) 12 Ounce Package Medium Egg Noodles, Cooked
    (2) 7 Ounce Cans Tuna, Drained and Flaked
    (½) Cup Onion, Finely Chopped
    (2) Cups Celery, Finely Chopped
    (1) Cup Mayonnaise
    (1) 4 Ounce Jar Pimento, Chopped and Drained
    (¾) tsp Salt
    (1) 10¾ Ounce Can Cream of Shrimp Soup
    (1) 10¾ Ounce Can Cream of Celery Soup
    (1) Cup Milk
    (1½) Cups Cheddar Cheese, Shredded

Preheat oven to 425 degrees. Cook the noodles and drain. Do not overcook! Stir in the tuna, onion, celery, mayonnaise, pimento and salt. Mix the soups and milk in a small saucepan. Heat through, stirring constantly. Add the cheese and stir until it melts. Pour over the noodle mixture and mix gently. Bake uncovered in two 2-quart buttered casserole dishes, for 30 minutes at 425 degrees. This is great for pot lucks. Even my family looks forward to this not your ordinary Tuna Casserole! Makes Two Casseroles of 10-12 Servings Each.

Marble's Invented by Accident Luscious Shrimp Soup

One afternoon I was looking for a quick meal and rummaging my fridge and cupboards, not wanting to make a grocery store run. I invented this soup from what I found on hand and it was so tasty I have made it every month since. It was fairly inexpensive, quick and easy- perfect for work nights!

    1/2 Package cream cheese
1 8 oz. Tub Sour Cream
    4 Cups Milk
    2 Cups Water
1 Can Campbell's Cream of Shrimp Soup
1 Package Shrimp Ramen - use the seasoning packet only, not the noodles.
(These can be used with another seasoning as a side dish, at another time.)
1 pound or more, as desired, pre-cooked small to medium, cleaned, peeled Shrimp

Throw sour cream, milk, and cream cheese in blender until smooth and creamy, then add water and canned soup, repeating until all smooth with no lumps. Pour into medium to large saucepan and begin cooking on medium heat, stiring constantly, until well-heated.

After five minutes, add Shrimp and continue stirring over heat for 3 minutes. Pour into bowls and serve with seasoned croutons, hot French or Italian bread and a lovely salad. A full meal and VERY tasty.

    SHRIMP CHOWDER (not in cookbook)
    serves 4 regular or low-fat

This chowder is an original recipe that I created after seeing something similar in a magazine. Served with a salad and biscuits, it is a dinner in a bowl. Make it low-fat; you'll never know the difference.

1 medium potato, peeled and cut in half-inch cubes
1 can, Campbell's Cream of Shrimp soup
3/4 cup milk, half-and-half, Land O Lakes fat-free half-and-half* or evaporated skim milk, undiluted
    1/4 cup dry sherry
    1 tbsp. butter
1/2 lb. medium shrimp, peeled and de-veined

Cook potato in small amount of water until tender. Drain; set aside. Mix soup, milk and sherry. Bring to just boiling. Add butter; reduce heat and simmer uncovered for 5 minutes. Add shrimp, whole or cut up, and potatoes. Bring to a boil, reduce heat and cook 1 to 2 minutes.

    Super Simple Shrimp Sauce Recipe

    --------------------------------------------------------------------------------

    visit inns website
print recipe add recipe to album

    --------------------------------------------------------------------------------

    Yield: 5 cups

    Ingredients:
1 can Campbell's Cream of Shrimp soup
1 can crab meat (4 oz)
1 can tiny shrimp (4 oz)*
    2-3 cups shredded cheddar cheese
    1 cup sour cream
    water as needed
optional: 1/2 cup red or rose wine

    Instructions:
Open the cans, place everything in a saucepan (excluding the canned shrimp liquid), stir and cook on medium heat until creamy. The canned crab meat and shrimp will break apart in the cooking process automatically, and crab meat liquid adds a seafood flavor to the sauce. (*If fresh shrimp are used, de-vein completely and cutup in tiny pieces.) Water can be added depending on the thickness desired.

This simple concotion is excellent as a hot dip or breakfast sauce over eggs. (Also makes a great substitute for a hollandaise sauce for an Eggs Benedict type entree.)
