  • Looking for a recipe for "Frito Pie"
    When I was younger my mother knew a woman from Mexico that lived in Texas who taught us how to make traditional tamales and tortillas. She also made a main dish called "Frito Pie" because it was made with Fritos. It also had ground meat and cheddar cheese. We have lost the recipe and would really like to make it. Can anyone help us?

    Here's a copy of Jolene's, posted eons ago, but it's great!!!

    Jolene's Frito Pie
    1 LB ground Beef
    One Bag Fritos
    One Small Package Shredded Cheese
    Chili Powder (To taste)
    Garlic Powder (to taste)
    2 can's Kidney Beans (light or dark)

    Optionals
    Can of corn
    Jalepenos
    Black Olives

    Brown ground beef using spices suited for a mexican dish.
    Layer all in a casserole dish, alternating ingredients in different layers with corn chips, cheese, etc.... Pop in oven for 30 minutes at 350.... serve with salsa or sour cream.

    I live in South Texas and grew up with Frito pie as a staple of my Tex-Mex diet. Frito pie is served at all sporting events along with hotdog and nachos. Take a single-serving sized bag of Fritos and slit the side open. Pour canned chili over the Fritos and top with grated cheddar cheese. Optional toppings are chopped onions and sliced jalapeno peppers. When I make Frito pie at home, I make my own chili and top a plate-full of Fritos with chili, grated cheddar cheese, shredded lettuce, diced tomatoes, chopped onions, jalapenos. Yum!

    Frito Pie
    A Texas favorite that is served at most high school athletic events,
    this is a quick recipe to now enjoy at home.

    INGREDIENTS:
    3 cups Fritos Original corn chips
    3/4 cup Texas yellow onion, diced 1/4" or less
    1 cup Mild Cheddar cheese, grated
    2 cups Chili (your favorite -- homemade, canned, whatever)
    DIRECTIONS:
    Preheat oven to 350°F.
    Spread 2 cups of Fritos in a baking dish.

    Sprinkle half the onion and half of the cheese over the Fritos.

    Pour the chili over the onion and cheese.

    Sprinkle the remaining onion and cheese over the chili.

    Top with the remaining 1 cup of Fritos.

    Bake for 15 or 20 minutes and cheese is bubbly. Serve hot.
