ISO simple desserts using boxed cake mix
I'm looking for any kind of desserts that use boxed cake mixes as a base. Not necessarily to make a cake, but as part of the ingredients. Any good recipes out there??

RE: ISO simple desserts using boxed cake mix
Have you tried the famous Crawlin Cake? I usually bake everything from scratch, but the Crawlin Cake is made with a box mix - I had to go out and buy a dozen different cake mixes and cans of frosting so I could try the different combinations. I did four last weekend (1 for a sick neighbor, 1 for company dinner, and 2 to bring to the office) - all different flavors. And I'm going to do different ones this weekend. Just type "icing in the cake" or "crawlin cake" in to the search to see all of the posts regarding this cake, or to get the one thread with all sorts of combinations, type "Crawlin Cake success stories only". If you have cake mixes to use up, this is the way to do it!

Get a box of Jiffy White cake mix. It has a recipe on the side for Fruit Magic. It's kind of like a cobbler. My grandma makes these for family gatherings, and the best part is that you can vary the pie filling it calls for!

Thanks, I forgot about the crawlin' cake that I've seen on this board. I will have to try it. I'll try and remember about the Jiffy box too.

CHOCOLATE TOFFEE CARAMEL BARS
Serves: 24
Effort: average
Comments: The name says enough. Very rich and very good.
This is a runner up in the Quick Cooking Nov./Dec. 02 magazine. Pg. 31. It goes by the name “Caramel Chip Bars” It’s also in the 2003 Quick Cooking Annual Cookbook pg. 91.
Ingredients:
1 pkg. yellow cake mix
1/2 c. oil
2 eggs
1 (12-oz.) pkg. mini semi-sweet chocolate chips
1 c. white vanilla chips
3 (1.4 oz.) chocolate-covered toffee candy bars, cut into pieces (if you freeze these, they chop up easier)
1/2 c. butter
32 vanilla caramels, unwrapped
1 (14-oz.) can sweetened condensed milk
Instructions:
Heat oven to 350.
Grease 13"x9" pan. In a large bowl, combine cake mix, oil and eggs; blend well. Stir in chocolate chips, vanilla chips and candy bar piece. (Mixture will be thick). Press half of mixture in bottom of greased pan.
Bake 350 for 10 min.
Meanwhile, in medium saucepan, combine butter, caramels and sweetened condensed milk. Cook over medium-low heat until caramels are melted and mixture is smooth, stirring occasionally. Slowly pour caramel mixture evenly over partially baked crust. Top with remaining cake mix mixture.
Bake an additional 25-30 min. or until top is set and edges are deep golden
brown. Cool 20 minutes. Run knife around sides of pan to loosen bars.
Cool 40 minutes.
Refrigerate 1 hr. Cut into bars. Store in refrigerator.

CHOCOLATE POKE AND POUR ICING IN THE CAKE

Comments: I tweaked some from her original recipe, but boy is this good.
INGREDIENTS:
1 box (18.25 oz.) Swiss Chocolate cake mix
3 large eggs
1 1/4 c. water
1/2 c. oil
1 (16 oz.) Chocolate Buttercream frosting, divided
1/2 c. creamy peanut butter
1 (8 oz.) cool whip (thawed)
INSTRUCTIONS:
Preheat oven to 350º.
Spray a 9x13” cake pan with a non-stick cooking spray.
In large mixing bowl mix water, oil, eggs and cake mix on low speed until moistened and then beat at medium speed for about 2 minutes. Pour batter into prepared pan and bake for 30 minutes or until tested done.
When cake is almost done, take about 2/3 of the frosting and the peanut butter and heat in microwave for about 30 seconds, until melted. Mix until combined and then immediately when cake is taken out of the oven, poke holes using a meat fork, and then drizzle the melted icing over the cake. Allow to cool completely.
With the remaining 1/3 frosting, combine with the cool whip, and then gently folding until well mixed. Spread over cooled cake. Keep refrigerated.
