    Just guessing, but I think "caramel" is the correct spelling and "carmel" is just an alternate variation.

    And, FYI, Carmel is also a city in California (pronounced Car-MEL) and a city in Indiana (pronounced (CAR-mel)!!

    When referring to the sauce - I think CARMEL is a spelling error.

    It's spelled caramel, but I've heard it pronounced two different ways caramel or carmel.

    They are the often same, unless you are referring to geography. I have many cookbooks that have "carmel" and "caramel" recipes which are interchangeable.

    We keep trying to tell these Northerners that they just can't pretend like the "A" in car A mel isn't there!!LOL

    And if a Southerner had gotten out to California before them Yankees did, it would be CARAMEL, CA!!!LOL

    Yeah, I really don't care how you say it, it's my favorite flavor of anything! I like carmel/caramel almost better than Chocolate!!!! Or with chocolate!!!!!
