    Grilled Onion with Sausage
    Peel medium to large onion. Remove core large enough to place in your favorite link sausage. Wrap in foil and seal well (I use double layers of foil)Place on the back of the grill and cook, turning frequently until onion is soft.

    Hot Dogs and Veggies

    Take hot dogs and cut into four pieces from each one. I take a skewer and put some bell pepper and onion slices then layer with hot dog, then more onion and pepper. I then grill with bbq sauce. These are really good!

    My grilled Hamburger's

    2 Pound of Ground Beef
    4-5 Tablespoons Applesauce
    Salt to taste

    Mix all together good and form into patti.Grill until done.

    Grilled Onions

    1 large Onion per person(Core out center)
    1 Tablespoon Butter
    2 tablespoons Brown Sugar
    1 Tablespoon Worchestershire sauce

    Core out the center of your onion add the butter,brown sugar and worchestershire sauce.Wrap tight in foil and grill until fork tender.

    Guadalajara Burgers


    This is the best burger Ifve ever had turn out consistently fabulous.

    1 tsp chipotle chili powder
    1/2 tsp kosher salt (substitute with sea salt, or I guess you could use
    table salt, it will change the taste)
    1 pound ground round (hamburger - I like the 15% fat)...
    1 can Cooking Spray
    4 Kaiser rolls (Donft use regular buns, this is a efancyf burger, why spoil it!)
    1-3/4 cups Tequila-spiked Salsa (actually Ifve never had this with tequila, if you leave it out, the burgers will still rock)

    Prepare grill

    Combine chili powder, salt, and beef. Divide the mixture into four
    equal portions, shaping each portion into a 1/2 thick patty.

    Place patties onto the grill rack coated with cooking spray - then keep
    an eye on them flipping them when needed.

    Grill/toast rolls, but DONfT burn them, please.

    Once all the burgers and rolls are eperfectf add the Tequila-Spiked
    salsa to the tops of the burgers (after theyfre on the rolls) and eat
    them while theyfre hot.

    Join Guadalajara Burgers Anonymous, cause these bad-boys are addictive.




    Salsa

    Try making the salsa one day in advance, this will let the flavors of the salsa mix and make for a VERY tasty treat when you eat the burgers. But donft let the salsa sit for too long in the fridge (4-5 days is too long, usually) because the avocado is pretty sensitive to time.

    Tequila Spiked Salsa


    2 cups chopped seeded tomato
    1 cup chopped onion
    1/2 cup chopped fresh cilantro
    1/3 cup chopped peeled avocado
    2 tablespoons fresh lime juice
    2 teaspoons tequila
    1/2 teaspoon kosher salt
    2 cloves garlic -- minced

    Combine all ingredients in a bowl, tossing gently. Yield: 3 cups (serving size: 1/3 cup). Yield: 3 cups

    ~Zesty Grilled Corn~

    1/3 cup butter
    2 tablespoons prepared mustard
    1 teaspoon Worcestershire sauce
    1/4 teaspoon lemon pepper seasoning
    2 teaspoons prepared horseradish
    6 ears sweet corn, husked

    Sprinkle with Chile powder when done.

    Preheat grill for medium heat. In a small saucepan, melt butter or
    margarine.

    Stir in mustard, horseradish, Worcestershire sauce, and lemon pepper seasoning.

    Place each ear of corn on a 13x12 inch piece of HEAVY DUTY aluminum foil. Drizzle with butter mixture. Wrap loosely.

    Grill over medium coals for 15 to 20 minutes, or until corn is tender.
    Small ears will take less time, and larger ears may take more. Carefully unwrap foil, and serve.

    STIR-GRILLED SMOKE SAUSAGE & VEGGIES

    Comments: We like this and it is easily adjusted to your own taste. Just put more or less of what you like in it. To make this low-fat, just use lite smoke sausage or turkey smoke sausage

    INGREDIENTS:
    1 (1 lb.) smoked sausage, chunked
    Several small red potatoes’s parboiled
    1 green pepper, diced
    4 banana peppers, diced
    1 onion, diced
    1-2 t. minced garlic
    1/2 package (1 lb. Size) cole slaw mix

    INSTRUCTIONS:
    In a wok that is made for the grill, add all the above ingredients except for the cole slaw mix. I have the grill on high at first to kind of sear everything, then I turn the heat down to low. Be sure to stir occasionally. When veggies are about half way done, add the cole slaw mix. Finish cooking til veggies are tender.
    If you don’t want to do this on the grill, you can do it in a wok or large skillet inside.

    BROWN DERBY STEAK:

    Serves: 8

    Comments: This is a nice change of pace from regular hamburgers

    INGREDIENTS:
    2 lbs. Lean ground beef
    2 eggs, slightly beaten
    1 T. dry mustard
    1 t. liquid smoke
    1 1/2 T. prepared mustard (I used hot dijon mustard)
    1 t. salt
    1 t. ground black pepper
    1 T. worcestershire sauce

    INSTRUCTIONS:
    Combine all ingredients and shape into patties.
    Cook on grill to desired doneness

    HOBO SUPPER

    Effort: easy
    Comments: Recipe made up by LaDonna

    Ingredients:
    1 hamburger patty
    sliced potatoes
    sliced carrots
    sliced onions
    2 strips of bacon
    Seasoning to your own personal taste.

    Instructions:
    Lay out aluminum foil for however many of these you are going to prepare.

    On the foil put in order:
    1 hamburger patty
    sliced potatoes
    sliced carrots
    sliced onions
    2 strips of bacon
    Seasoning to your own personal taste.
    Wrap the foil tightly around this. Make sure it has a tight seal. I bake at about 350 for 1 hour or until all is done.
    If you don't want bacon, add a dollop of butter on these.
    Additional things you can add: cabbage, green peppers, banana peppers, jalapeno peppers, mushrooms. Just whatever your personal taste is.

    HAWAIIAN PEPPER STEAK

    Comments: Jim and I were talking one evening and he started kicking around this idea. Between the both of us, this is what we came up with. Teamwork, works everytime.

    INGREDIENTS:
    2 lean sirloins steaks
    4 pineapple rings
    1 c. pineapple juice
    coarse black pepper
    garlic pepper

    INSTRUCTIONS:
    In a ziplock bag add the sirloins with pineapple juice. Let marinate over night or all day. Light grill. Put steaks on grill. On one side season with coarse black pepper. On other side season with garlic pepper. Cook until almost at desired doneness. When almost done, top each steak with two pineapple rings. Finish cooking.

    GRILLED STEAK WITH FRENCH ONION MUSHROOM SAUCE

    Comments: The sauce would taste good also over grilled chicken breast or pork. Jim came up with the basic recipe. I helped him with the amounts.

    INGREDIENTS:
    2 boneless lean steaks (seasoned to your own taste) (we used salt, pepper & season salt on both sides)
    Butter flavored cooking spray
    1 (4 oz.) can sliced mushrooms
    2 t. minced garlic
    1 (8 oz.) container French Onion Dip
    1/4 c. Fat-Free half and half
    1/2 t. course ground black pepper
    1/2 t. dried chives
    cooked rice

    INSTRUCTIONS:
    Grill steaks to your own personal preference.

    While steaks are cooking in a pan inside.

    Spray with butter flavored cooking spray. Heat pan and add mushrooms and minced garlic. Let sauté about 5 minutes. Then add french onion dip, fat-free half-and-half, course ground black pepper & dried chives. Stir well.
    Bring to a light bubbly boil then reduce heat. Let simmer about 15-20 minutes stirring every so often.

    Bring steaks in off grill. Place on rice. Then cover the steaks & rice with the sauce. Using half on each steak.

    VIVA ITALIAN BACON WRAPPED CHICKEN MUSHROOM KABOB

    Comments: You can lower fat content by using turkey bacon and low fat viva Italian dressing. We really like it with the turkey bacon. Recipe made up by LaDonna. It is also fun to put these on kabob sticks. With them put some par boiled red potatoes, pearl onions, green pepper chunks. Makes a really nice presentation and it taste good.

    Ingredients:
    3 lb. chicken tenders
    16 oz. fresh mushrooms (quartered)
    2 bunches of green onion
    32 oz. bottle viva Italian dressing
    1-1/2 lb. bacon slices

    Instructions:
    In a gallon zip lock, add first 4 ing. Let set over night or at least all day.
    When ready to cook.
    Wrap chicken around mushroom, then wrap bacon around that. Secure with either a toothpick or put on a kabob stick.
    Charcoal or bake (350), turning often, for 45 min. or until done.
