Gooey Mississippi Mud Cake

  • Gooey Mississippi Mud Cake
    Cake is served with a is chocolate cake with marshmallow topping topped with a fudge, nutty frosting...baked and served plain, with ice cream or whipped cream...I am going into detail because this is not a solid cake, so the usual Miss. Mud Cake recipe is not the cake I am looking for.... thanks so much for your help....

    Louisiana Mudcake

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    4 eggs
    2 cups sugar
    1 cup margarine or butter -- melted
    1 1/2 cups flour
    2 cups walnuts or pecans -- chopped
    1/3 cup cocoa
    1 teaspoon vanilla
    1 cup coconut -- shredded
    7 ounces jar Marshmallow creme

    Combine eggs and sugar, beat at high speed for 5 minutes. Add remaining ingredients (except marshmallow), mix well. Bake in greased and floured 13" x 9" pan at 350 degrees for 30 minutes. Remove from oven and spread marshmallow over warm cake. Wait a few minutes and frost cake with Floodtide Frosting while cake is still warm.

    Floodtide Frosting
    1/2 c butter or margarine, melted
    1/3 cup cocoa
    1 teaspoon vanilla
    6 tablespoons milk
    1 pound confectioner's sugar

    Combine all ingredients and mix well with a whisk. Spread carefully over marshmallow layer on cake.

    Oops! No nuts in frosting, but I'm sure you could add some to the frosting recipe.

    Yoo...Jerusha, thanks but pretty sure this is not the one I want but will try it anyway cause sounds good...the cake I am looking for, is a little like a pudding cake but not so thin....again thanks...
