  • ISO homemade ice cream w/ instant pudding
    My mother had an easy ice cream recipe that included instant pudding mix. I can't find it, but I remember it being so easy and so yummy. Can anyone help?

    It will take me awhile to get all five into this.

    This is my moms recipe
    Homemade Ice Cream Recipes (Ann Baker)

    1 to 1 ½ c. sugar
    1 c. evaporated milk
    6 oz. pudding mix or jello (depending on flavor)
    6 eggs (or can use an equivalent amount of Eggbeaters, which is pasteurized)
    Additional milk as needed
    Additional ingredients as listed below
    Can use cream if you want it richer

    Peach ice cream: Use vanilla cook and serve pudding and make according to package directions. Beat in sugar, evaporated milk, and eggs. Fold in 2-3 cups of diced fresh peaches. Fill freezer can no more than 2/3 full. Freeze according to manufacturer directions.

    Strawberry ice cream: Substitute large box strawberry jello for pudding. Dissolve jello in 1 c. boiling water. Beat in sugar, evaporated milk, and eggs. Fold in 20 oz. can frozen strawberries. Fill freezer container no more than 2/3 full. Freeze according to package directions.

    She has also made pina colada using vanilla pudding and adding about 1 c. coconut, a small can of crushed pineapple (drained), and maybe 1/2 to 1 t. rum extract.

    She has also made lemon using lemon pudding and chocolate using chocolate pudding and for vanilla you just dont add any fruit to the basic recipe

    HOMEMADE ICE CREAM

    2 cups sugar
    5 eggs
    1 pkg.dream whip
    1 c.canned milk
    1 Tbsp.vanilla ( or what ever flavor you what your ice cream)
    1 pkg instant vanilla pudding
    Beat eggs add sugar,dream whip,and instant pudding. Mix well and canned milk and vanilla. piur in enough regular milk to fill 1/2 gallen freezer
    this is very good ice cream

    Lisa, Here is my favorite ice cream recipe.
    6-8 eggs
    2 cups sugar
    8 cups milk
    1 can carnation milk + enough milk to make 2 cups
    2 Tablespoons vanilla
    1/2 teaspoon salt
    1 large box vanilla instant pudding

    Beat eggs until light & add sugar Beat until it becomes thickened.Add rest of ingredients; mix thouroughly. Pour into ice cream freezer. This usually fills our 6 qt. freezer. Hope you like it.

    My sister Karol makes really good icecream. Her church just made a cookbook and I'm looking at the recipe now.

    Ice Cream For Freezer

    1 instant pudding
    2 eggs
    1 1/2 c. sugar
    1-2 tsp. vanilla
    2 small cartons whipping cream
    1 qt. half and half
    1/2 tsp. salt
    whole milk

    Mix all together and pour into 1 gallon freezer. Fill rest of the way with milk. Use around 3 cups of rock salt in the ice around freezer. After freezing, you may either pack tight with ice and cover with a rug and let sit to firm up, or place in freezer.
    You may use any flavor of pudding.

    Add enough milk to fill container 2/3 full.

    Freeze according to manufacturer's instructions.

     

    Yields: 4 quarts

    I don’t remember where I got this recipe.

    I always have request for this recipe.

    I usually make vanilla and let everyone add whatever toppings they like.

    It is so rich & creamy.

     

     

    Flavoring suggestions:

     

    Tutti-Frutti: 3 bananas, mashed.1-8 oz canned crushed pineapple, drained, 1-6 oz jar maraschino cherries, drained, cut in half or chopped.  (My favorite)

    Banana Nut: about 3 mashed bananas, 1/2 to 1 cup chopped pecans

    Oreo: Crush one bag Oreo’s

    Pineapple: two flat cans crushed pineapple and juice,

    Strawberry: 1 or 2 package frozen strawberries, thawed mashed, red food coloring, strawberry

    Chocolate: use chocolate pudding, Chocolate chip: grate up large Hershey bar;

     Peach: fresh or frozen peaches, mashed, lemon juice

     

    Adapt to freezer size and individual preference.

    This states it is for a 1/2 gallon freezer??? Can that be - it seems like a lot of volume for that amount of ice cream.  Most freezers are 4 qt + 

    I am getting ready to make it for company and I just wanted to be sure.

    I don't make any ice cream w/ eggs in it and there are a bunch of recipes using the instant pudding - maybe they came from Kraft or Jello  but I think they're also on the BB.   Those are very yummy - chocolate is especially good - quick to make and you can also use the sugar free and other things to make the ice cream lower calorie and with less sugar - still yummy!
