  • hibachi shrimp or chicken
    When I go to Japanese Restaurants, I order Hibachi Shrimp and Chicken. It is fabulous. Does anyone have a recipe for the seasonings and sauces used in making this recipe? I think i am close by not close enough. Thanks for your help.

    I'm not sure what you have but I do a mix of 1/4 c soy sauce,1/4 c water,diced garlic,a dash of hot sauce & 1 tbs brown sugar..mix well& marinade chix, shrimp or pork ..very simple & yummy! You can add a little ginger if you like but this is my ole' reliable,...
    for a spicer glaze I have used Harry& davids onion & red pepper jelly and paint it on the shrimp while grilling..it is awesome!

    Recently for my shrimp kabobs I have been buying that bread dipping oil in different flavors, they contain vinegar as well as other seasonings, and marinate the shrimp and the veggies in them and it is wonderful. Karen

    Benihana Japanese Resturant Secret Recipe
    2 cups soy sauce
    1/3 cup ground roasted sesame seeds
    1 cup whipping cream
    1 pinch garlic powder
    1 teaspoon dry mustard dissolved in 1 teaspoon water

    Combine ingredients in blender or food processor and mix together for 15 seconds. Pour mixture and one cup whipping cream into saucepan, stirring over low heat. Sauce may be stored in refrigerator for up to 3 days. When re-heating, add 6 tablespoons whipping cream and stir completely before serving.

    Benihana Hibachi Chicken And Hibachi Steak
    Yield: 4 Servings

    Ingredients

    4 skinless boneless chicken
    -breast ha; lves
    1 lg onion
    2 md zucchini
    2 c mushroom
    2 tb vegetable oil
    6 tb soy sauce
    4 tb butter
    1 salt
    1 pepper
    2 ts lemon juice
    3 ts sesame seeds
    6 c bean sprouts
    1 mustard sauce
    1 ginger sauce

    Instructions

    Slice chicken, onion, zucchini and mushrooms into bite-size pieces. Spread
    1 tbsp oil in a large frying pan over medium high. Spread another tbsp oil
    in another pan over medium high heat. Begin by sauteing the sliced chicken
    into one of the pans. Add 1 tbsp soy sauce, 1 tbsp butter and a dash of
    salt and pepper to the chicken. Add the onion and zucchini to the other
    pan. Add 2 tbsp soy sauce, 1 tbsp butter and a dash of salt and pepper.
    Saute the vegetables as long as the chicken is cooking, being sure to stir
    both pan often. When the chicken has sauteed for about 2 minutes or when it
    appears white on all sides, slide the meat to one side of the pan, pour
    lemon juice on it, then add the mushrooms to the other side of the pan.
    Pour 1 tbsp of the soy sauce over the mushrooms, then add 1 tbsp butter
    plus a dash of salt and pepper. Continue to stir both pans. After 6 to 8
    minutes, or when the chicken is done, sprinkle 1 tsp sesame seeds over the
    chicken, then mix the chicken with the mushrooms. Spoon the chicken mixture
    in 4 even portions on 4 plates next to 4 even portions of the vegetables
    from the other pan. Pour the bean sprouts into the same pan in which you
    cooked the vegetables and cook over high heat. Add 2 tbsp soy sauce, 1 tbsp
    butter and a dash of salt and pepper. Cook the sprouts for only a minute or
    two, or until they have tenderized. Just before you serve the sprouts,
    sprinkle 2 tsp sesame seeds on them. Serve the sprouts next to the chicken
    and vegetables with mustard sauce and ginger sauce on the side.

    Benihana's Japanese Onion Soup

    Stock:

    1 chicken bone
    1 beef bone
    1 onion, diced finely
    1/2 carrot, sliced
    1/4 stalk celery, chopped
    1/4 piece of garlic smashed
    2 quarts water

    Soup ingredients:

    1 medium onion cut into thin slivers
    sesame or vegetable oil
    1 pkg. mushrooms, thinly sliced
    chopped green onions
    Durkee's Fried Onion Rings

    Stock directions:

    Boil all of the ingredients together for 45 minutes. Strain through a cheesecloth or soft napkin. Use only the broth.

    Soup directions:

    Slowly cook the onion in oil until it is slightly brown and crispy. Drain and pat with paper towels to absorb excess grease.

    Add onions, mushrooms, green onions to broth.

    Just before serving, sprinkle with minced Durkee's fried onions, lightly

    -1/4 cup Onion -- chopped
    -1 Small Ginger root or 1/8 teaspoon Ground ginger
    -1/2 cup Soy sauce
    -1/4 cup Rice wine vinegar
    -Combine all ingredients in blender container and process until smooth

    -Dip shrimp in Benihana Ginger Sauce.

    Ginger Sauce
    -1 tb Garlic, finely chopped
    -2 tb Brown bean paste
    -1/4 c Ginger, finely chopped
    -1 Serrano chili, stemmed &-- finely chopped
    -2 tb White vinegar
    -1 tb Sugar
    -1 tb Soy sauce
    -3 ea Cilantro sprigs, chopped


    -Mix all ingredients thoroughly.

    -Use immediately or at least within 6
    hours of preparation as the flavours will get stronger the longer the
    sauce sits.

    -This thick, dark, rich & spicy sauce goes well with as a dipping sauce
    with bland foods such as tofu.

    I have this recipe that came from Tepanyaki, a Japanese restaurant in Epcot in Orlando. It is wonderful:

    Ginger Sauce for dipping:

    6 ounces onion
    1 ounce fresh ginger
    3 ounces Japanese soy sauce
    6 ounces water
    pinch dried parsley
    1/2 piece lemon
    1 ounce rice vinegar

    Place all ingredients in blender or food processor until well mixed.

    Honey-Mustard Sauce.

    Honey-Mustard Sauce: In a small bowl stir together 1 cup Dijon-style mustard and 2 tablespoons honey. Makes: 4 to 6 servings

    Japanese Salad Dressing

    1/3 Cup soy sauce
    1/3 Cup rice vinegar
    1-1/2 Tbsp vegetable oil
    1 tsp. sesame oil
    1 clove garlic, minced or pressed
    1 tsp. sugar (or Splenda, if you prefer)

    Mix all the ingredients and shake well.

    2 Tbsp. = 1 point (but 1 Tbsp. should be ample, since it has a lot of flavor)

    Sometimes I add a little grated fresh ginger, too.

    I tried the recipe that zakons gave me for the ginger sauce and for hibachi chicken. It was fabulous and just what I was looking for!!!! Thank you so much. Are there any other Japanese recipes similar that anyone would think I would like?
