Just before you are ready to serve it mix some cornstarch with water and make it thick like a gravy. Add it to the soup and stir til it thickens. Start with about 1/4c. and add more if it isn't as thick as you like.

Toss in a couple of tablespoons of tapiopca (out of the box, not prepared) at the start of cooking and it'll thicken all by itself.... :-). You may need to adjust the amt. after you've tried it once, but that's a good amt. to start with.

If you have any leftover mashed potatoes put them in there.

You can put some of the potatoes and some of the broth in the blender and puree. If it isn't thick enough, repeat with some more of the potatoes and some broth.

When I want to thicken a dish with tapioca, I use tapioca starch (it is powdered tapioca).

Arrowroot is also a nice thickner as well as flour.

I would do like PlumCrazyAlta. Add some cornstarch and water to make a paste. Add a little of the hot liquid, mix together and then mix it all into the soup.

I mash the potatoes in the crockpot with my hand potato masher. If still not thick enough I mix a little milk with some flour and stir it in. You shouldn't need much. Do both of these at the end of cooking.
    Good luck.

This soup will thicken more while sitting.

I mixed my cornstarch and water in a bowl, then poured into my crockpot with  my soup.

It foamed up and boiled over before I was able to put my bowl and spoon down to grab

    a towel.

I have never heard of cornstarch foaming. And your crockpot must have been on full boil. It should have worked, I do not know why this would have happened.
