    Hi! May I share a recipe with you? A co-worker brought this recipe in and it was to die for. She shared the recipe with all of us at work, and now I would like to share it with you. It is a dip called Cowboy Caviar and it is wonderful!

    1 can (14.5oz) white corn, drained
    1 can (14.5oz) black beans, drained & rinsed
    1.5 lb Roma tomatoes, chopped
    1/3 cup finely chopped onion
    1/3 cup finely chopped cilantro
    1 clove garlic, minced
    1 avacado, chopped

    2 Tbsp. Red wine vinegar
    1 Tbsp hot chile sauce (I used a minced jalepeno)
    1 Tbsp. lime juice
    salt, pepper to taste

    Gently mix the vegetables together. Mix the vinegar, hot pepper sauce, and lime together and pour over the vegetables. Add salt & pepper to your taste. Refrigerate at least 2 hours before serving to let the flavors blend. Serve w/ tortilla chips and enjoy!

    My version is a little different but probably just as good! I know I love it!

    Texas Caviar

    1 can black beans, drained and rinsed
    1 can black eyed peas, drained and rinsed
    1 can diced jalapenos or mild green chilies
    1 can Mexi-Corn
    1 red onion, finely chopped
    ½ red pepper, chopped
    ½ green pepper, chopped
    3 cloves garlic, minced
    ¼ bunch of fresh cilantro, chopped
    1 bottle Maple Grove Farms Fat Free Caesar Dressing (or Zesty Italian)

    Mix all ingredients. Chill 2-4 hours before serving. Most say its better the next day!

    Wida, yours does sound good. This is the recipe for Texas Cavier that my friend makes and it is VERY good! Isn't it amazing the various varieties/ingredients that the same name can have???! Trish

    Rochelle's Texas Cavier

    1 16 Ounce Can Pinto Beans
    1 16 Ounce Can Black Beans
    1 16 Ounce Can Great Northern White Beans
    ½ Cup Green Pepper, Chopped
    ½ Cup Onion, Chopped
    (2) Fresh Tomatoes, Chopped
    ½ Cup Black Olives, Sliced & Drained
    ½ Cup Italian Salad Dressing
    ½ Cup Picanté Sauce
    ½ tsp Garlic Powder
    1 Cup Grated Cheese
    Salt/Pepper To Taste

    Don?t drain the beans. Mix everything together and let sit overnight. Serve with tortilla chips.
