Can someone tell me how to cook peach peelings to make fried peach pies. I know I've heard about this but have never done it and I have 1/2 bushel of the most gorgeous peaches I have ever seen. I want to use up all of the peach and not waste any. Can you help please!!!!!!!!!!

I found this with my grandma's recipes. I remember her making this after canning peaches every year:

At least 24 peach pits, can use as many as you have after 24, them more you use the stronger the flavor is

    1 pkg sure jell
    5 1/2 c sugar
    pinch of salt

cover pits with water, let stand over night. Bring to a boil and let boil 3 minutes. Strain through cheesecloth. Add 1 pkg sure jell to 4 cups of juice. Boil and add sugar and salt. Boil 3 minutes. Pour into jars leaving 1/4 inch headspace, process in boiling water bath for 10 minutes.

My mother used to make peach pit jelly. It is delicious. I think she used more than 24 pits per batch though. She always canned lots of peaches and she would save the pits for jam. It was really a special treat.
