    Breaded Tomatoes

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1/2 cup chopped onion
    2 tablespoons butter or margarine
    2 tablespoons all-purpose flour
    2 (14-1/2-ounce) cans diced tomatoes -- undrained
    1/2 cup sugar
    1/2 cup vegetable oil
    1 teaspoon salt
    1/4 teaspoon pepper
    3 slices bread -- toasted and cut into 1/4-inch cubes

    In saucepan, saute onion in butter until tender; stir in flour just until blended. Add the tomatoes, sugar, oil, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until slightly thickened. Stir in toast cubes.

    Here's another Claudia Sanders Breaded Tomatoes recipe.


    Breaded tomatoes go well with any meal and the way people eat them you will have to admit they go very fast!

    BREADED TOMATOES

    4 cups canned tomatoes (if whole, squeeze or mash them)
    1/2 cup vegetable oil
    1 teaspoon salt
    1/4 teaspoon black pepper
    1/2 cup granulated sugar
    1/2 cup chopped onioll
    1/2 teaspoon Durkee Charcoal Seasoning
    2 tablespoons butter
    2 tablespoons flour
    3 slices white bread (toasted brown and cut into small squares)

    1. Combine tomatoes, vegetable oil, onion, salt, pepper, and char­coal seasoning.
    2. Cook over medium heat until mixture boils.
    3. While tomatoes are cooking, melt butter and add flour, mixing thoroughly.
    4. Add this to the tomato mixture.
    5. Cook until mixture thickens. Stir to keep from sticking.
    6. Add the sugar and simmer for 2 or 3 minutes.
    7. Mix in the toasted bread pieces just before serving.

    Serves 6.
