  • Pork Chops - what do YOU serve with them?
    I am planning on pork chops for supper and reqally don't want potatoes and gravy again. Any suggestions would be greatly appreciated! Kathy

    Spoon bread, green bean casserole, au gratin potatoes, broccoli with cheese sauce, any fresh steamed veggies, rice, mac and cheese, home fries, cornbread stuffing.

    Garlicky Green Beans


    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 cups green beans -- trimmed
    1 teaspoon butter
    1/8 teaspoon sea salt
    1/8 teaspoon freshly ground black pepper
    1 garlic clove -- minced

    Cook beans in boiling water 2 minutes. Drain and plunge beans into ice water; drain.
    Melt butter in a small nonstick skillet coated with cooking spray over medium heat. Add beans, salt, pepper, and garlic; cook 2 minutes or until heated.

    Yield: 2 servings (serving size: 1 cup)

    Baked Butternut Squash


    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 (2 pound) butternut squash
    2 tablespoons butter -- melted
    1/4 teaspoon salt
    1/8 teaspoon ground cinnamon
    1/8 teaspoon ground nutmeg
    1/8 teaspoon pepper
    6 teaspoons brown sugar -- divided

    Cut squash in half lengthwise; discard seeds. Brush squash halves with butter. Combine the salt, cinnamon, nutmeg and pepper; sprinkle over squash halves. Place 2 teaspoons brown sugar in each half. Sprinkle remaining brown sugar over cut sides of squash. Place in an 11-in. x 7-in. baking dish coated with nonstick cooking spray. Cover and bake at 350' for 40 minutes. Uncover; bake 15-25 minutes longer or until squash is tender.

    Scalloped Apples

    Ingredients:
    6-8 tart apples
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    2 Tbsp. lemon juice
    1 cup light brown sugar
    1/2 cup butter
    1/4 cup pecans, chopped
    Peel, core and slice apples. Melt butter in a small saucepan and add cinnamon, nutmeg, lemon juice and brown sugar. Heat until sugar is melted. Place apples in a baking dish and pour mixture over apples, sprinkle with pecans and bake for 45 minutes at 350 degre

    I usually always have some kind of potatoes (just because my family always wants them), mac & cheese, salad, some type of rice. I tried something else the other day tho and it went well was "Honey Glazed carrots".

    Also something else that I do is a porkchop casserole. It is very easy and everyone here loves it.

    PORKCHOP CASSEROLE

    4-6 Pork chops
    3-4 sm. potatoes (cut into chunks)
    1 can whole kernel corn
    1 can green beans
    2 Tablespoons Worcestershire sauce
    Salt and pepper to taste.
    1 bell pepper (jullianed)

    I use an electric skillet, but this could also be done in a crock pot. I always season my chops before placing them in the skillet.
    Place chops in skillet and brown on each side. Add worcestershire sauce, pepper, potatoes, and salt and pepper. Cover and cook slowly until potatoes are tender. Add corn and green beans and simmer until nice and warm. Toss occassionly until warm. Add salt and pepper to taste.


    **HONEY GLAZED CARROTS**

    1 1/2 C baby carrots
    3 Tablespoons honey
    2 Tablespoons Brown Sugar
    1 teaspoon lemon juice

    Place 1 inch of water in a sm. saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until crisp-tender. Drain. In small skillet, combine the honey, brown sugar, and lemon juice. Cook and stir until bubbly. Add carrots and stir until well coated.

    I usually throw a couple of potatoes in the microwave and just split them open with lots of butter, and I have to have applesauce (sometimes with a little cinnamon sprinkled on top).
