White Bean Soup

1 lb bag of Navy or Great Norther Beans
1 can Chicken Broth
1 small onion chopped
2 stalks celery, chopped
2 carrots cleaned and chopped fine
salt and pepper to taste
2 cups hot and spicy V-8 Juice
1 cup ham diced
1 to 2 tbs bacon grease
Enough water to cover beans

Wash and pick beans. Cover with water and bring to a boil for 2 minutes. Turn off heat and let soak for 1 hour. Drain soak water. Return to soup pot, add chicken broth, V-8 Juice, salt and pepper and diced ham. Saute Vegetables in bacon grease until just crisp tender. Add to beans. Cover with water and simmer until beans are done. Keep lid tilted.
