REC.- FAMOUS DAVE'S BEEF BRISKET

    SUZYCREAMCHEESE requested a recipe for this, and I just happen to have Famous Dave's cookbook. So here you go. CeCe

    FAMOUS DAVE'S JUMPIN, JUKEN & JIVEN ALL DAY BEEF BRISKET

    Ask your butcher for a whole brisket and have him remove most of the fat, leaving only 1/4" to help preserve the juciness. Also have the butcher separate the two muscles (the flat and the point ends). Hand rub each brisket with 1 T. fresh minced garlic, and 1/2 cup of rib rub (recipe to follow). Using indirect method, start the smoking process. Smike briskets for a minimum of 8 hours, keeping the temperature about 180 to 200 degrees. After 4 hours, to keep the briskets from drying out, start mopping with Secret Moppin' Sauce every hour. At the end of 8 hours, the briskets should be almost black.

    The following step will insure your brisket turns out very tasty. Wrap each brisket in a double layer of foil, with 2 cups of Moppin' Sauce poured over each piece. Seal foil tightly and return to the grill. Grill this @200 degrees for 2-3 additional hours, or until the internal temperature reaches 160 degrees. Let stand 15 min. before slicing. The burnt ends are the best part.

    Recipe for Secret Moppin' Sauce. Rib Rub, and indirect method of cooking instructions will follow.

    Use this rub on the beef brisket previously posted. CeCe

    FAMOUS DAVE'S RIB RUB

    2 cups packed light brown sugar
    1 cup kosher salt
    3/4 cup sugar
    1/2 cup garlic seasoning (powder)
    1/4 cup chili powder
    1/4 cup lemon pepper
    1/4 cup onion salt
    1/4 cup celery salt
    2 Tbsp. coarse ground black pepper
    2 Tbsp. celery seeds
    1 tsp. crushed cloves
    1 Tbsp. cayenne
    1/2 cup Mrs. Dash origional blend
    1/4 cup salt

    Mix altogether and store in an airtight container.

    This recipe is used with the beef brisket recipe, previously posted.

    SECRET MOPPIN' SAUCE

    3 (20 oz.) bottles Famous Dave's BBQ Sauce
    2 quarts water
    1 cup beef stock base
    1/4 cup Kahlua
    2 Tbsp. yellow mustard
    2 Tbsp. blackstrap molasses
    1 Tbsp. liquid smoke
    1 tsp. toasted sesame seed oil
    1 tsp. coarse ground black pepper
    1/2 tsp. cayenne
    1/2 tsp. crushed red pepper flakes
    2 sticks butter

    Combine all in a stockpot and mix well. Simmer 20 min., stirring occasionally. Yield: 1 gallon

    Use this for his beef brisket, previously posted.

    Using a chimney charcoal starter, getting 15 charcoal briquettes to red hot. Place coals on one end of a grill, and place one pound of green hickory around the coals. Use water soaked hickory chunks, if fresh cut green hickory is not available. Add additional charcoal and hickory chunks every hour, to keep it the temperature you need (180-200 for brisket recipe).
