    i grew up in the small town of comstock ne, around 55 years ago. my mom made a runza sandwich with hamburger, cubed ham and sauerkraut. does any one have that recipe out there. i really miss that. it was sooo good.thanks, kathy

    NEBRASKA RUNZAS

    Amount Measure Ingredient -- Preparation Method

    FILLING:
    1 1/2 Pounds ground beef
    1 chopped onion
    2 Cups chopped cabbage
    2 Tablespoons butter
    1/2 Teaspoon salt
    1/8 Teaspoon pepper
    DOUGH:
    2 Cups warm water
    1/2 Cup sugar
    1 egg
    6 1/2 Cups flour -- (6 1/2 to 7)
    2 pkgs. yeast
    1/2 Cup Crisco shortening
    2 Teaspoons salt

    Filling: Brown beef with onion, pepper and salt. Wilt cabbage in butter and mix together.
    Dough: Dissolve yeast in water, add sugar, shortening, eggs, salt, 1/2 cup flour. Beat until smooth; add remaining flour. Roll dough out thin on floured surface. Cut into squares, approximately 13x7 inches. Place meat mixture inside, bring 4 corners together. Turn upside down on baking sheet. Bake at 350 degrees for 20 minutes.

    For variation: Sprinkle your favorite cheese on meat mixture (can be frozen).

    Amount Measure Ingredient -- Preparation Method

    1 Pound hamburger meat
    4 Cups cabbage
    2 Large onions
    Green pepper and celery (optional)

    Brown hamburger meat (seasoned). Remove, leaving drippings in pan. Put cabbage, onions, celery and green pepper in pan, fry on low heat as this scorches easily, until slightly browned. Add hamburger meat and cool to just warm before using.
    Bread dough in Bread section. Roll out part of dough to about 1/4 inch. Cut in 4 x 4 squares and spoon heaping tablespoon of cabbage mix into center of square. Bring 4 corners to center, pinching shut. Seal tightly, turn upside down on greased baking pan. Set aside to rise about 1/2 hour. Bake at 350 degrees for 20-30 minutes. Brush with melted butter and eat while warm.

    4 lbs. hamburger
    5 med. onions -- chopped
    1 lg. head cabbage -- shredded fine
    Salt & pepper to taste
    2 pkgs. frozen hot rolls

    Brown hamburger and onions together. Drain off fat. While cooking meat, set out hot rolls so they will rise. Add cabbage to meat and stir fry until tender, about 10 minutes. Set in refrigerator to cool. After rolls rise, punch down each one and smash until thin. Using an ice cream scoop, put scoopful of meat mixture onto each roll and pull up edges and seal. Turn over so sealed edges are down and place on cookie sheet sprayed with Pam. Bake for 30 minutes at 375 to 400 degrees until brown. Brush tops with melted butter.
